No Bake Peanut Butter & Blueberry Oat Bars

December 7, 2025 Amanda Plott

If you think dessert has to be complicated, loud, or require the oven to audition for a spot on a reality show, think again. These No-Bake Peanut Butter & Blueberry Oat Bars are everything you want in a snack: chewy, slightly crunchy, subtly sweet, and packed with real ingredients that do good things for your body. They’ve got the nostalgic peanut-butter-and-jelly vibes with a modern, health-conscious twist—no baking, and zero guilt.

Why you’ll love them

  • Fast: Ready in about 20 minutes with a short chill time.

  • Nourishing: Rolled oats, nut butter, and chia seeds lend fiber, protein, and healthy fats.

  • Flexible: Use fresh, frozen, or freeze-dried blueberries (each gives slightly different texture and flavor).

  • Kid-friendly: Sweet but not cloying—perfect for lunchboxes or after-school fuel.

  • Pantry-friendly: Minimal ingredients, many of which you probably already have…

Pumpkin Oat Muffins

October 11, 2020 Amanda Plott
pumpkin-oat-muffins6.jpg

These Pumpkin Oat Muffins will blow your mind! there’s no flour used in these muffins. Meaning if you buy gluten-free oats, that makes these muffins gluten-free on top of already being vegetarian and dairy-free! One of the best parts is that these muffins are so easy to make.

A quick whir around a blender with the oats and a mix with wet ingredients and you’ve got yourself an easy peasy muffin batter! I topped these off with a touch of raw sugar to give a little added sweetness, but honestly these muffins are pretty stand alone…

Steak House Honey Wheat Oat Bread (Bread Machine)

April 16, 2020 Amanda Plott
honey-wheat-bread2.jpg

Baking has been the name of the game in my house lately. What else is there to do when you’re stuck where you are for days, weeks, and months on end? When we decided to make some steak for dinner, I thought it was high time to whip up some of that famous ‘steal house’ bread that we all know and love.

You know the bread that I’m talking about. The soft, sweet, fluffy brown bread that is often served up with a whipped honey butter. This bread is exactly like that one. The only difference is that it’s homemade and in a larger loaf form!…

Blueberry Oat Bars

February 25, 2019 Amanda Plott
blueberry-oat-bars9.jpg

I think, just like most out there, I generally go in and out of wanting sweet or savory for breakfast. Most days, savory wins out. This week though, I was in a sweets sort of mood! These Blueberry Oat Bars couldn’t have hit the spot any better. They’re sweet, tart, and perfectly acceptable for breakfast, brunch, or even dessert!

These oat bars are surprisingly easy to make, with really just a handful of pretty standard staple items too. There’s little mixing and no cooking involved. Just a few stirs and some time to bake. Plus, they’re low sodium, vegetarian, and dairy-free too. Good stuff all around…

Skinny Gingerbread Granola

December 3, 2018 Amanda Plott
gingerbread-granola8.jpg

‘Tis the season. …Gingerbread season, that is!

Gingerbread is the spice of life, especially as we get closer to Christmas and the New Year. I took a leap of faith last week and ordered some vegan almond ‘egg nog’ from one of my favorite almond milk creators. They’re local here to me in Austin Texas, and while I like the flavor of egg nog… raw egg in my drink sorta… freaks me out a little bit.

So with my vegan almond milk in hand, I decided that I needed some granola to go with it. I’ve made a lot of granola lately. Most of them have been keto-friendly, grain-free, gluten-free, and the like. This one though? This one is more of a traditional oat granola. Though, it’s east enough to make it gluten-free!…

Lemon Poppy Seed Granola

March 26, 2017 Amanda Plott
lemon-poppy-seed-granola4.jpg

I'm so happy it's spring time finally. I seriously love all the bright flavors of citrus and the beautiful berries that I'm seeing at the store; like these jumbo blueberries that I got this past week. I mean... just look at those suckers! They are the size of two or three whole almonds. Yowza! Some of my favorite spring flavors have to be lemon and blueberry, so naturally I wanted to pair my giant blueberries here with something bright and lemony!

It's been a while since I baked up some granola, so I thought it was high time to make a fun 'Spring' granola that's loaded up with the good stuff. Poppy seeds along with some chia seeds, almonds, and oats. The honey I used for this was a 50/50 blend of honey and stevia; giving me less calories and the same flavor. It's just good all the way around...
