Greek 'Salsa'

October 5, 2025 Amanda Plott

Let’s toss the word salsa into the Mediterranean blender and see what dances out—Greek salsa! No, it's not about salsa dancing with a side of feta cheese, though that sounds like a party waiting to happen. We're talking about a vibrant, tangy, fresh side that takes the fiery heart of traditional salsa and marries it with the crisp, herbaceous soul of Greek cuisine. It’s like the culinary equivalent of a feta cheese and tomato love story with a lemony, zucchini-filled happy ending.

What Is Greek ‘Salsa’ Anyway?

The idea of Greek salsa isn't ancient or tradition-locked, but it’s an inspired mash-up that combines the bright, fresh ingredients of a Greek salad with the easy, chunky, spoon-it-on-anything attitude of salsa. Imagine the classic salsa components—tomatoes, onions, maybe peppers—getting a Mediterranean makeover with zucchini, kalamata olives, tangy feta, fresh tomatoes, and a drizzle of lemon juice and extra virgin olive oil. Bam! A saucy, chunky dip that’s guilt-free, fresh, and totally crave-worthy…

This Fresh Strawberry Bundt Cake takes the cake. Seriously! This cake is DELICIOUS if I do say so myself. It is jam packed FULL of yummy strawberry flavor and nothing about it is artificial or out of a box, which makes it EVEN BETTER.

The secret is in the sauce. To start this cake off right, you put a whole pint of strawberries to cook down into an amazing sauce. On top of that, you throw some freeze dried strawberries into the batter and the end result is a perfectly guilt free and AMAZING strawberry cake…

Healthified Restaurant Style Salsa

April 28, 2020 Amanda Plott
healthified-salsa5.jpg

This is an old one, but a good one. This Blender Salsa is tried and true and was one of the very first recipes that I ever posted here way back in 2013! It’s been a good long time since I made this salsa, and being as I managed to get my hands on a bunch of canned tomatoes… and a lot of us are surviving on pantry staples, I thought there was no better time than now to make this Healthified Restaurant Style Salsa again.

Originally I came up with this Healthified Restaurant Style Salsa for a family member who wanted one similar to what you’ll find at a chain restaurant that’s known for it’s peppery name…

Italian Lunch Box

March 21, 2019 Amanda Plott
italian-lunch-box4.jpg

I was sort of slightly tasked with coming up with some fun and easy lunch(able) ideas recently. It seems like breakfast is pretty easy, dinner is almost always planned, it’s lunch that most people seem to have the greatest trouble with. I know that if I make up a few little lunch boxes ahead of time, that I’m a lot more likely to eat those, rather than going without or eating something I really shouldn’t.

For me, I like light lunches. Snackable lunches. Something finger-friendly that I can nom on while working at my desk. Right? Well, this Italian Lunch Box is just that! I made four of these boxes up in the matter for just a few minutes and they’re full of fun little bits that are as versatile as they are delicious!…
