Smothered Chicken Burritos

August 10, 2023 Amanda Plott

Lightened up Smothered Chicken Burritos are an incredibly flavorful and health-conscious rendition of the beloved Mexican staple. The star of these mouthwatering burritos is the seasoned up chicken breast, infused with a tantalizing blend of spices that imparts a delightful smokiness and tang.

Departing from the conventional high-fat components, these burritos opt for nutritious low carb wrap style tortilla, all generously smothered in a homemade green chili cheese sauce. For an invigorating touch, a dollop of creamy Greek yogurt or a spritz of lime juice can be artfully drizzled on top…

Air Fryer Breakfast Burrito

February 27, 2023 Amanda Plott

This tasty breakfast burrito has been my staple breakfast for a week now so I just had to share it. Usually when I make breakfast burritos the tortilla can end up a bit soggy or wet with all the good stuff I pile into it - namely the fresh pico and cheese. I recently decided to try and put it in the air fryer once it’s all together so that it could, in theory, end up with a slightly firmer outside and an even more gooey cheesy inside. And that’s exactly what I ended up with.

This Air Fryer Breakfast Burrito is as loaded as they come. Bacon, eggs, cheese, pico, jalapeño - oh my! I lightened it up by going with a super low calorie whole wheat and flax tortilla and was anything other than disappointed. I also used pre cooked and crumbled bacon so that I could use less bacon but still get some in every bite…

Breakfast Roll Up Wrap

October 19, 2022 Amanda Plott

Who can say no to a good breakfast wrap? Not me! This Breakfast roll Up Wrap has been my go-to breakfast for the most of the last week or so. And it’s easy to see why. Bacon, eggs, and cheese all wrapped up and ready to go! Of course, I always have to add on some pico, salsa, and jalapeños for an extra kick!

All said and done, this roll up will only cost you about 300 calories, which isn’t bad at all when you consider what all you’re getting. Plus, it’s super filling and cheesy too! Bonus, it’s simple and easy to make on top of it all. Literally one pan and you’re done…

Inside-Out Truffalo Breakfast Burrito

January 19, 2022 Amanda Plott

It’s going to be a busy day as I prepare for the possible in climate weather that is supposed to be sliding in this evening. So, I went out on my walk and then came in and made myself this Inside-Out Truffalo Breakfast Burrito. I’ve made an inside-out burrito before, but it wasn’t quite like this. What’s truffalo? It’s a delightful mix of truffle and spicy buffalo flavors!

The first time I heard about truffalo was at a chicken wing joint and after that I set out on a mission to find a sauce that was similar - tada! I found it. It’s pretty good too. I took this breakfast burrito a step further though and included a spicy buffalo seasoning AND truffle salt…

I'm trying to get myself back on the exercise bandwagon starting today. (And I'm pretty sure I nearly overdid it already!) Summer is on the way and I'd like to both look and feel my best during swimsuit season. So, to start my morning off right, I decided to make myself this little diddy right here.

This Low-Carb Keto 'Inside-Out' Breakfast Burrito is exactly what it sounds like. A breakfast burrito that uses the eggs as the wrap and is then loaded up with some of the usual suspects; bacon, cheese, pico, and even some turkey! Hence, inside-out burrito…

Healthy Freezer-Friendly Breakfast Burritos

February 12, 2017 Amanda Plott

I'm all about breakfast lately, but it's often difficult to find the time to be able to make myself something that's tasty and wholesome. I've tried to make freezer-friendly breakfast burritos in the past, but they never worked out quite the way that I wanted. Live and learn I guess, so I decided to give them another go with a few changes.

The first lesson that I learned was that freezer-friendkly breakfast burritos must be individually wrapped to keep them from sticking together. Plus reheating them can be a bit of a touch-and-go situation. I've found it best to use a loosened paper towel to wrap them up in for a quick reheat in the microwave...
