Here in Texas, we’re known for our beef and nothing says ‘comfort food’ to me quite like beef stroganoff. So, I thought I would put the two together with a fun twist on a comfort classic! This Beef Stroganoff Soup is a one pot meal and comes together in under 30 minutes of cook time.
I love beef stroganoff because it’s a meal that everyone can enjoy, and turning it into a soup gives it a more guilt-free spin. It’s lighter but still perfectly warm and satisfying for when you want to dig into a classic comfort food. And as with most comfort foods, beef stroganoff is all based on just a few simple ingredients.
Other than the beef, one of the traditional ‘must have’ ingredients for a proper beef stroganoff is the noodles! Of course, I couldn’t go with just any noodle. I got my hands on Skinner Extra Wide Egg Noodles, which happen to be my favorite. Especially when it comes to casseroles and comfort foods!

This twist on a comfort food classic is a perfect meal in a bowl. I didn’t find that it needed anything else paired with it. But, if you wanted to get some more greens in there, a nice side salad would go well with it!

• 1 Lb. Sirloin Beef, Cubed
• 8 Oz. Sliced Mushrooms
• 1 Sweet Onion, Diced
• 3 Minced Garlic Cloves
• 1/2 C. Dry White Wine (Like Chardonnay) or Broth
• 5 C. Reduced Sodium Beef Broth, Divided
• 1 1/2 C. Dry/Uncooked Skinner Extra Wide Egg Noodles
• 1 Tbsp. Worcestershire
• 2 Tbsp. Whole Wheat White Flour
• 1/2 C. Plain Fat Free Greek Yogurt
• Fresh Parsley
• Salt & Pepper to Taste
Directions:
Lightly coat the inside of a large soup pot with non-stick cooking spray and sauté the 1 Lb. steak over medium-high heat for about 5-7 minutes.
Season with salt and pepper to taste and remove from the steak from the pot to set aside.
Place the 8 Oz. mushrooms, 1 diced sweet onion, and 3 minced garlic cloves into the pot and cook over medium-high heat for about 5-6 minutes or until the onions are tender and mushrooms are cooked.
Add the 1/2 C. of white wine to the pot to deglaze and scrape up all the crispy brown bits in the pot. Cook this down for about 3 minutes.
Pour in 4 1/2 C. beef broth, 1 1/2 C. Skinner Extra Wide Egg Noodles, and 1 Tbsp. Worcestershire; stir until well combined.
Continue cooking for about 5-8 minutes or until the soup reaches a simmer and the noodles are al dente.
While the noodles are cooking, whisk together the remaining 1/2 C. beef broth and 2 Tbsp. flour in a small bowl.
When the noodles are al dente, add in the flour mixture and the 1/2 C. greek yogurt. Continue simmering for about 5 minutes.
Stir the steak back into the soup and season it all with more salt and pepper to taste.
Remove from the heat and serve right away to enjoy with fresh parsley to garnish!
