I was looking for some spring inspiration and came across this recipe. It sounded good, but I was looking for something a little more simple (and that perhaps didn't involve frying.) Pan or otherwise.
This is a fantastically easy and equally delicious recipe. Perfect for spring!
I ended up grilling my chicken inside on my counter top grill, but this would be just as great (if not better) grilled outside on the the real deal.
We are in the throes of what I lovingly have dubbed as 'hell week' in my house. A.K.A. the week of both Easter and my little girls third birthday. Keeping all of the meals simple, outside of those two events, ... is an absolute must for me.
It is imperative for my sanity and survival.

Skinny Lemon Dill Chicken

The Skinny:
Servings: 4 • Size: 6 Oz. Chicken Breast • Calories: 205 • Fat: 3 g • Carb: 1.4 g • Fiber: 0.2 g • Protein: 39.4 g • Sugar: 0.3 g • Sodium: 110.6 mg
Ingredients:
4 Chicken Breasts
4 Cloves Garlic, Smashed
1/2 Lemon, Juiced
1 Tbsp. Dill Weed
1 Tsp. Olive Oil
Salt & Pepper To Taste
1/2 Lemon, Sliced or Wedged (Optional Garnish)
Directions:
Place all of the ingredients into a ziplock bag or shallow air-tight dish in the refrigerator to marinate for at least 4 hours (overnight is best!)
Once ready, grill the chicken for 5-6 minutes or until internal temperature reaches 180 degrees F.
Yes. It's that easy.
Serve garnished with a slice or wedge of lemon!
