Looking for a quick dinner idea? Look no further! This Queso Chicken Bake is here just for you! And when I say queso, I do mean queso! Just look at his cheesy an delicious this chicken is! I should note too, it doesn’t get more simple to easy than this toss and bake recipe either. with just 5 ingredients, you can have dinner tossed together and ready to go in no time at all!

Being as this dish is so simple and has so few ingredients, there isn’t much to change here other than to swap some of the things out for ‘no salt added’ or ‘low sodium’ options. This way you can season it yourself to your own liking. Which I almost guarantee is less salt overall…

Oooooh, yes I did.

I've said it before... and I'll say it a million more times. Cheese and/or queso are my biggest weak points. I will legit do almost anything for a good cheese or queso. And one of my all time favorite guilty-pleasure quesos? Yep. The one at Chili's.

Now, their queso isn't like a traditional tex-mex queso. It's more of a chili cheese dip actually. Which, obviously I'm totally down with since it's one of my faves. Again... it's cheese. So, yes. Please, get in my mouth hole. The one thing in which you may notice about their queso is that it's clearly made using their house chili, sans beans. Queso has been my Achilles' heel for years now. Melted cheesy goodness. I mean... who can pass it up? Well, not this girl! I'm always looking for ways to make my queso feel a little less guilty though. And maybe not just feel less guilty, but to actually be less guilty.

Vegan Queso

This is it, people. This is what we've been training for. ...Happy Cinco de Mayo! In honor of my most favorite excuse of the year to eat Mexican food, I decided to make a Tex-Mex 'must have' into the ULTIMATE vegan bite of goodness.

Black Bean & Roasted Butternut Squash Tostadas

A fresh local butternut squash means Fall is finally here! I love it when I start to get my hands on winter squash. They are easily one of the most tasty and versatile foods out there. Anywhere from stuffing them, to roasting them, to mashing them as a puree. I'm sold. Hook, line, and sinker.

Mexican Street Corn & Zucchini Nachos

Mexican street corn is almost a staple here in Texas. It's perfectly roasted and smoky corn goodness that's covered in spices and cheese. Heaven in the form of corn. Today though, I wanted to take that corn amazingness and move it a step forward into some nachos! These nachos aren't your average nachos either. They're a full blown meal in one. Hearty and loaded up with plenty of vegetables and bursting with flavor.

The zucchini is a perfect pairing to the corn. It's sweet and adds just enough texture to the nachos to not leave you missing meat. That's right. These are vegetarian too and bean-less. It's really a great 'warm weather' dish since it's light but also really filling without weighing you down...
