Whole Wheat Raspberry Oat Bars

I realized the other day that it has been a hot minute since I made any sort of bar recipe. I think the last one I made was a couple of years back and was a twist on a PB&J and was made around back-to-school time. Sooo I thought it was high time that I made some more bars. I didn’t want these to be thin little nothing bars either. I wanted them to be a meal in themselves.

Whole Wheat Blueberry Oat Bars

These Whole Wheat Blueberry Oat Bars are a take on a raspberry version that I made a while back. Spring time always gets me into a lemon and blueberry mode, I’m not really sure why. Maybe it’s because blueberries are more in season and you can find packs of fresh big beautiful ones. Either way, these Whole Wheat Blueberry Oat Bars are easy to make and perfect for breakfast, brunch, or even dessert!

Unlike the blueberry oat bars I’ve made before, these ones are thick and hearty. Less of a snack and more along the lines of being used as part of meal, unless you cut each of the 16 bars in half again…

PB&J Oat Bars

So, there isn't much that makes me think of back-to-school and childhood other than the flavors of a good peanut butter and jelly. I've never felt inclined to limit PB&J to a mere sandwich though. In fact, one of my most favorite ways to enjoy peanut butter and jelly is in the form of a parfait. Seriously, it's good stuff. I'm a firm believer that you just can't go wrong when you mix the sweet and salty taste pf peanut butter with the tartness of fresh fruits.

Today I wanted to step outside the box even further to make these amazing PB&J Oat Bars. These would make for a perfect snack, an addition to a lunchbox, or even as breakfast; which is how I've been enjoying them all week long! Back-to-school as been crazy and this grab-and-go bar has been exactly what I needed. I've actually enjoyed them so much that I'm planning to make them again next week!...

Skinny Raspberry Vinaigrette

I have been in love with a specific salad for about a week and a half now. After going through a full bottle of Annie's Natural & Organic Raspberry Vinaigrette I pondered to myself how I could go about making something similar to it.

I've made a lot of salad dressings in the past... but vinaigrettes always seem to throw me for a loop. I always try and use the less oil approach by substituting half of the oil called for in a recipe for water. It doesn't tend to work out very well with homemade dressings since it sort of waters everything down. Including the flavor. Ick!...
