It’s H.O.T. Hot. It’s the long stretch here at the end of Summer and I can’t wait to get to the other end of it when we hopefully roll into the cooler weather of Fall. With it being the heat of the Summer, I’m still in avoiding-the-oven mode for the most part. Caprese Jar Salad
It’s salad season, and right now, I’m all about these jar salads. I love having a few ready made lunches on hand in the fridge that are put together and just need a good shake up to enjoy. They make for great grab-and-go lunches too since you can eat them straight out of the jar. This particular one is based one of my all time favorite salads, a caprese.

I’ve been wanting to make a Vegetarian Green Curry for a good long while now, and today was finally the day. This curry starts off with onion and spices and quickly gets into veggies, tofu and even some chickpeas. The goal here was to load the curry up with as much veggie goodness as possible to make up for the lack of meat in it.
