Over the lifetime of The Skinny Fork, I've been blessed to see such growth between myself and the blog. As strange as it may seem, we both seem to push the other to our limits in mostly positive and amazing ways. I'll be honest in saying that I'm a bit of an introvert. I could hold up in my house for days on end and never give it a second thought. I have a lot of social anxiety that I've been steadily working through as I become older and more confident in myself.

About three years ago I made this amazing Skinny Shepherd's Pie, to give a tip of the hat to my Irish heritage around St. Patricks' Day. Since then, I've changed a lot and so have my cooking skills. The recipe is still fantastic, but there's always room for improvement and change too! This time around I decided to make a few more smart swaps.

One of my favorite things to do lately has been to swap cauliflower mash for mashed potatoes whenever possible. Don't get me wrong, I love potatoes but cauliflower has significantly less calories than potatoes. Healthified Crock Pot Turkey Taco Soup

So, one of my most popular recipes has to be my Healthified Crock Pot Chicken Tortilla Soup, which also happens to be a family favorite and has been for many years now. With that being said, I decided to make something similar, but more with the flavors of another favorite; tacos! This Healthified Crock Pot Turkey Taco Soup is going to knock your socks off with it's amazing flavors, even if it wasn't really what I had planned on making today.

Yep! Even I have fails in the kitchen still. My original recipe for today turned out to be a flop. Literally. It flopped straight over into the trash. I don't know what's wrong with me lately! My brain just can't seem to get things going quite as well as it usually does. It feels like I'm on auto pilot. I could blame that on the craziness of the holidays or... that it's a particularly hard time of the year for me, as I think it is for a lot of other people too...

Crock Pot Pumpkin & Turkey Chili

Occasionally, for one reason or another, I have started going through to rework certain older recipes. Some of them needed photography updates, others were outdated in other areas, this one though... it needed a total overhaul. My way of cooking and my thoughts towards food have changed immensely over the years as I've grown and started to come into myself as a home cook and health nut.

I never did like the original pictures that I shot to pair with this recipe, and while the recipe tasted amazing... I knew looking back at it that I could do much better by my standards today. With back-to-school just around the corner and the end of summer breathing down my back with an ever tightening schedule, this easy one pot meal is just what I needed! Why a one pot meal? It keeps things simple. I'm left with one dirty dish and plenty of happy, full tummies at the end of the night. What's better is that I only need to focus on one pot for cooking. Yay!

This meal is basically hands off for 30 minutes, giving plenty of time to get other needed things done in between stirring and checking. One of my favorite things about this soup though, has to be that it's super packed with flavor and loads of sneaky vegetables; making it easier for you and healthier for the family at the same time...

Naked Sriracha Turkey Burger

For a while now, I've been wanting to create a 'naked' burger. What's a naked burger? Basically it's a burger that is so good you don't need a bun. That's right. This is a bun-less burger! It sits here completely bare (except for a little drizzle of sauce) and couldn't be more proud of it.

Turkey burgers tend to get knocked on a lot with people making claims like they are dry or boring and bland. Honestly, I've not ever found that to be the case.
