Pineapple Juice Cake

Guys, there isn’t enough good I can say about this Pineapple Juice Cake. It’s truly and honestly, one of my most favorite cakes. Even next to pineapple upside down cake. And yes, there is a reason I haven’t yet posted a recipe for a pineapple upside down cake here. - And the reason is that it’s one of my all time favorites and I want to be sure it’s healthier version is every bit as delicious as the original.

This cake, takes the cake! It’s sort of similar in texture to a tres leches cake in that the cake has time to soak up all the pineapple juice goodness to leave you with one deliciously moist and gooey cake. I would eat this cake for breakfast, snack, dessert… anything and everything! It’s just that damn good…

Strawberry Banana Bread

Strawberries and banana go together like a perfect pair in anything from smoothies, juices, desserts, and other sweet treats. But never banana bread. Why not? Today that changes! This Strawberry Banana Bread is one of my newer favorites. Especially right now during summer strawberry season.

Banana bread is fast becoming a staple in my house. And being as I had plenty of bananas that needed to be used up, I thought… why not make another loaf? Shisho Pesto

So, I realized the other day that due to the shape of world right now that I didn’t get to do as much with my backyard herbs as I generally do during the Spring and Summer. Usually I have a yard that’s plentiful with basil, rosemary, thyme, oregano, limes, and grapes! Sometimes there’s some strawberries and tomatoes out there too.

With all the basil I end up making pesto all through the Spring and Summer months. And being as I didn’t have any this year? I haven’t been able to make my homemade pesto. Craving the tasty green stuff, I decided to be a little creative. I got my hands on some Shisho, which is an herb that’s used often in Japanese dishes…

Peach Bundt Cake

One of my favorite things about summer is peaches. I don’t know about anywhere else, but here in Texas locals come out in droves selling them at the side of the road. This year, I haven’t gone anywhere to see any. But, my local grocery store thankfully has ‘Texas Peaches’ on hand from local vendors so that I was more easily and safely able to get my peach fix this year.

This cake is truly one of the most moist and deliciously each cakes out there. The peach juices and fresh peach really take this simple and easy to make cake to the next level. It would be just as good as part of a breakfast or brunch, as it would be for dessert!…

Frozen S'more Bars

Look, it’s freakin’ hot out ya’ll. It’s so hot that even if I could make traditional s’mores, I don’t think I’d enjoy them quite the same. Peaches are a big thing around here during the summer. Even though this summer is a little different, there’s still plenty of peaches to go around. So when I got my hands on some fresh local peaches, I wanted to be sure to do something worthy with them. That’s where this Skinny Peaches & Cream Baked Oatmeal comes in.
