Skinny Peanut Butter Bread

Baking is the name of the game right now. It never fails, every year in the midst of Fall and Winter months I attempt to get as much use out of my oven as possible since it becomes too hot to do so through the most of the Spring and Summer months. It’s fair to say that I'm not the biggest fan of fried foods. So when my brother moved back from Colorado and offered me his air-fryer (because he didn’t like it) I was pretty excited to get to play with it. Over the last year of air-frying I have learned a few tips and tricks. There is definitely a bit of a learning curve when it comes to the air-fryer.

Not everything is great when being air-fried rather than deep dried. And that’s just the nature of it. Of course, the deep fried things tend to be more greasy, but they are also more crisp and tend to take less time. Usually around this time of year my daughter is begging my mom to make pumpkin chocolate chip bread or muffins, but since my mom isn’t around yet this year (for the obvious reasons and the not so obvious ones) , I decided to whip up a loaf of the family favorite myself.

This Skinny Pumpkin Chocolate Chip Bread is lightened up in the best of ways without sacrificing flavor or texture. The bread is just as moist and decadent as it’s full on bad boy brethren - I promise! I only made a couple of swaps to this bread. Blackout Brownies

A couple of weeks back I got my hands on some ‘black’ cocoa powder. It’s extra dark unsweetened dutch process cocoa powder and it is delicious! It’s a great way to get a naturally deep dark black chocolate for baked goods. Which means it’s absolutely perfect for blackout, black velvet, and Halloween sweets!

There’s nothing quite like waking to homemade cinnamon rolls. They’re truly one of my favorite breakfast items. Soft, fluffy, sweet, and once you get the hang of it - they’re fairly simple to make too! These Skinny Cranberry Cherry Cinnamon Rolls really take the cake, especially around Fall and Winter when cranberries are all the rage.
