Back in June (wait really? I’ve really lost all sense of time and space…) I made these awesome Skinny Baked Garlic Parmesan Boneless Chicken Wings. And the seasoning mix that I put with it was just so damn amazing that I've kept it in my spice rack ever since. Yes, it’s really that good.

Look, sometimes a girl just needs to eat some BBQ. I’ll be honest, I’ve never actually cooked ribs on my own. I’ve eaten plenty of them. But cooking them? It just sounds scary! Even as a native Texan, the thought of cooking GOOD ribs seems daunting. So when I cam across the idea of cooking them in the pressure cooker? I was sold.

Instant Pot Cheesecake Bites

Most recently I found a fun way to make tamales in the instant pot, and being as I’ve also made a cheesecake in the instant pot too, I thought… is it possible to make mini cheesecakes? As it turns out, it is! These Instant Pot Cheesecake Bites are fun and easy to make. Plus, they’re lightened up just enough to be guilt free while still tasting great.

As it turns out, the instant pot is a great way to make cheesecakes, and these mini ones are made directly in my handy-dandy egg bite mold! I lightened them up by using sweetener instead of most of the sugar, and also used a reduced fat cream cheese…

Black Rice Vegetarian Sushi

As with most things coming and going from my kitchen right now, I decided to make my veggie sushi this week with a festive Halloween inspired black rice twist! I used a short gray black rice to make these veggie sushi rolls three different ways. The black rice is 100% naturally colored, so no food dyes here!

I made a standard veggie roll with carrot, zucchini, avocado. A ‘philly roll’ with a tofu cream cheese and vegetarian bacon. And finally, a spicy sriracha beet sushi roll. They were all super easy to make and perfectly delicious too!…

'Brain' Deviled Eggs

These deviled eggs are all dressed up for Halloween and ready to go with some pink hue to the filling and a fun little design on top that makes them look like mini brain bites. They’re lightened up, keto friendly, low carb, vegetarian, and gluten-free too! Which makes them even more fun for your Halloween eats and treats this year.
