It’s Spring and for me that means it’s time to play around with all things lemon and poppy seed. This Lemon Poppy Seed Chicken Salad is a fun twist on a classic chicken salad. Homemade Chicken Noodle Soup

What I ended up getting for Easter was an upset stomach. Boo! Oh, well. As soon as it started to settle, I went straight into chicken noodle soup mode. Cheers to easy dinners! This Baked Caprese Chicken is a real winner. With just a handful of ingredients and about 5 minutes of actual hands on time (maybe even less) this chicken is super easy, tasty, and quick to make! The recipe is easily doubled or tripled for a larger family, but I’ve left it scaled back for two servings.

Ever wanted to make tamales but just weren’t completely sure how? These chicken Instant Pot Tamale Bites are not only easy to make, they are delicious and take hardly any time at all. To make these tamale bites, you do need a silicone egg bite mold, but you don’t need any corn husks at all!
