Holy moly! It's been a busy weekend over here. I'm ready for the monotony of a Monday. For sure. It's still pretty warm here in Texas, so while the weather is working on slowly cooling off, I'm working on salads still over here.

Of course, I still need to get my fix of Fall inspired veggies. So... I decided to load this salad up with plenty of Fall-friendly veg. I started this salad off with a base of baby spinach. It's one of my most favorite salad starters, and I think that's because it's such a versatile and nutritional green...

I'm so excited for this Football season and Walmart is my go-to store for all things Football! Game day grub has to be one of my all time favorite styles of food. It could be because it's always served more 'family style' and left as perfectly bites sized, snack worthy eats and treats. One of the things that I love the most about it is that it's multi-functional as a pressure cooker, crock pot, and even for a quick sauté. This makes it the perfect 'one pot' meal maker.

For a few weeks now, I've been working on perfecting this Asian Sweet Chili Chicken recipe. The first time I made it - it was really good. But, it wasn't quite where I wanted it to be. So, with a few more tweaks I gave it another go or two until I had it on point...

I can hardly believe that yesterday was the first day of my daughter going to second grade! Time just flies these days, even more so when it's time for back-to-school. It's a chaotic and unforgiving time of the year for any parent. That's why I'm all about simple meal solutions right now. I've kind of completely and utterly fallen in love with my new pressure cooker, y'all. Before I got this baby, I was all about the slow cooker. But, now? Just toss it in the pressure cooker for a few minutes and you've got yourself a full on meal that would have taken HOURS in the slow cooker. And the best thing is, if you like a slow cooker - it can slow cook too! It's amazing for one pots too, like this curry right here.

Curry is another one of my favorite 'use up leftover' meals. No matter what veggies or meat you have on hand, you can most likely make a curry with it...

Mermaid Noodle Salad

So, I've decided that this week on the blog is going to be all about... drumroll please... Mermaids! Ta-da! That's right. It's going to be a week full of mermaid inspired dishes; eats and treats alike. This Mermaid Noodle Salad is an old family favorite that originated in one of my daughter's cook books, but has been tweaked and adjusted so much that it's a whole new recipe by now.

After carefully transcribing all of my notes on it in the cookbook, I finally settled on the perfect end result. One thing that I love most about this noodle salad is that you can serve it hot or cold. Being as it's the middle of summer here in Texas though... I'm naturally opting for a cold noodle dish myself. However, if you still feel like being a mermaid in the winter months, feel free to enjoy it warm! Just serve it right away instead of giving it an hour+ of chill time...
