It’s been a rough week! But, somehow 'I’m pressing on. This Overnight Strawberries & Cream French Toast Bake is not only easy to put together and delicious, but it’s also lightened up and is the perfect make ahead breakfast for a busy weekend. I’ve made a blueberry version of it before, but I decided to change it up a little bit this time and use up these big giant beautiful sweet strawberries that we have popping up ahead of Summer now.

Banana Nut Waffles

These Banana Nut Waffles are here to stay. It’s as if banana nut bread and waffles got together and made one ultimate breakfast or brunch bite of awesomeness. And they’re made from scratch (that’s right, no boxed batter here!) It’s good stuff too. That means you get to put what you want and like in there. For instance, I went with chopped pecans AND chopped walnuts.

I like to make a batch of these ahead of time and then keep them on hand through the week to be enjoyed as a quick heat and eat breakfast option. And yes, they do reheat really well via a toaster or toaster oven to get back some of that original crispness!…

Spinach & Feta Bundt

I love to play around and shake things up a bit. And more often than not, we all think of a bundt pan as being used for something sweet. This time around I decided to use it for something savory. This Spinach & Feta Bundt could honestly fit into any meal space; breakfast, brunch, lunch, or dinner. And let me just say that this thing is absolutely bursting with flavor. It’s honestly one of the most delicious things I’ve eaten in a good long while.

It’s light, but still filling and has a richness to it with the feta cheese but also the lemon in there to cut through it. It’s really good stuff and it’s absolutely perfect for these few months of Spring. Breakfast is probably my favorite meal of the day, so I’m always looking for inspiration and trying new things. I saw this idea for a sheet pan breakfast and just knew I was going to have to healthify it and give it a try! Boy, am I glad that I did. This Hash Brown Sheet Pan Breakfast is a super easy and delicious way to start the day.

Sometimes you just need something a little different to help shake things up a bit and keep life interesting. Especially during this part of the year when we’re all just trying to get through to summer break at this point. This Breakfast Biscuit Pie is made with a lot of the usual breakfast subjects, but in a new and fun way! I would say this Breakfast Biscuit Pie is basically a cross over of a quiche and a breakfast casserole.
