Whole Wheat English Muffins

February 4, 2020 Amanda Plott
whole-wheat-english-muffins8.jpg

Several years ago I had a bread machine. It was big and bulky and took up a LOT of my kitchen space… which let me just tell you, its REALLY limited as it is. After it’s fair share of use, the bread machine started to act up and, long story short, I ended up getting rid of it.

Over the last year or so, I’ve had the desire to get another bread machine. There’s just something truly satisfying about making your own bread and being able to take charge of what’s in it and how it’s flavored. So, I bit the bullet and got a new one! It’s a lot more quiet and significantly smaller than the old one. The first thing on my list to make? Homemade whole wheat english muffins, of course!…

I’ve been wanting to make some donuts again for a good long while now, and while the day ahead is going to be crazy busy - I took the time this morning to whip up these delicious Baked Strawberry Donuts! To really back in the strawberry goodness, I took out all the stops. The cake part of the donut has a homemade strawberry puree mixed right in. And the frosting? Ooooh… the frosting.

The frosting is made with freeze-dried strawberries and is LOADED with strawberry flavor. The secret is in the dried strawberries, I swear! I decided to finish the donuts off with some sweet little heart shaped sprinkles annnd… as you can see, they’re pretty damn cute!…

Feeding a crowd in the morning can be… tricky. Especially if everyone is wanting pancakes. While pancakes are a staple breakfast food, they aren’t exactly ideal when it comes to feeding a family when you wall want to sit down and enjoy a meal together. That’s where these Whole Wheat Blueberry Sheet Pancakes come in!

Sheet pancakes are super simple to make, and the best part is that everyone can enjoy them fresh, warm, and at the same time together. Never mind that pancakes bake themselves and you don’t have to hover over the stove for nearly an hour just to make sure you don’t under or over cook each pancake…

If you’re a fan of ice cream then obviously you’ll understand the name of this cookie. I based these sweet little bites off of one of my most favorite ice cream flavors. Chunky Monkey! Just like the name states, these cookies banana based cookies are… well… chunky! How? They’re loaded up with dark chocolate chips and chopped walnuts.

The best part? These cookies are guilt-free enough that they could even work as a breakfast cookie. Seriously. Pair one with some fruit and you have a fun and tasty cookie for breakfast! Even better, they’re vegetarian and egg-free. ..

Air Fryer Breakfast Taquito

January 8, 2020 Amanda Plott
air-fryer-taquito10.jpg

Sometimes you just need a nice warm breakfast to get you going in the morning, and recently since I’ve fallen in love with lavash bread, I decided to try my hand at using the lavash to make a breakfast taquito! Being as I tend to be a lot more of a savory breakfast person, rather than a sweet breakfast person, breakfast taquitos are pretty much my jam.

Normally breakfast taquitos are made with flour tortillas, but the lavash bread gives me a lot more bang for my buck, if you know what I mean. (It’s fewer calories and whole wheat!) Even though it’s still pretty chilly outside in the mornings, I figured the air fryer would be a quicker and easier way to get my breakfast taquito hot all the way through…

If you love banana bread, you’ll also love this Unicorn Banana Bread. Other than a few healthy swaps and the sprinkles added into the mix, this is a pretty standard banana bread. Lots of bananas, lots of whole wheat, and lots of color…
