Sun-Dried Tomato & Spinach Egg White Bites

After a long long long and super fun birthday weekend for my daughter, I'm honest in saying that we all are still pretty exhausted today. Before we took off though, I had my fridge well prepared for our return; full well knowing the chaos and tired state of mind that we would be returning to. And with 'sous vide' egg bites still being on trend and easy to make, I thought what better breakfast to have ready!

The last 'sous vide' egg bites that I made were standard and very traditional in a bacon and cheddar flavor, so today I decided to kick it up a notch. These were made with only the egg whites, cheese (of course), sun-dried tomatoes and fresh baby spinach. What goes better with any of those things other than a good helping of feta cheese?...

Skinny Carrot Cake Roll with Cream Cheese Filling

Just in time for Easter! This morning I woke up with a Spring in my step (pun intended) and just had to make this Skinny Carrot Cake Roll with Cream Cheese Filling. I based the recipe loosely on the Pumpkin Cream Cheese Roll that I make in the fall. But, there's not ever a bad time for a cream cheese roll, in my opinion.

I kept this recipe pretty simple, using a boxed cake mix with a few add-ins to beef it up a bit. I kept it light with my usual swaps ins for a cake mix and even used a handy new powdered sugar replacement in the cream cheese filling.

Okay. So. Not only are these biscuits and gravy low-carb and gluten-free, but I have to say that this was some of the best damn biscuits and gravy that I've ever put in my mouth. And those are big words coming from a southern girl.

Spring is coming.

I don't know about you, but I can see the changes in the season here in Austin Texas already. It's staying daylight out longer and longer in the evenings now and the sky is a brighter shade of blue. The birds are chirping, the grass is turning green, and it's warming up to a perfect 70 degrees on most days.

I know that we will likely have a few more 'winter' days or grey rain, but it's always nice to see the onset of Spring. It's probably my favorite season (when it comes to the weather especially.) That's why I've started this weekend off right with this Spring inspired carrot cake granola!...

Yaaay, St. Patrick's Day is coming. Maybe it's some of my Irish heritage or something to do with it being my Dad's birthday, but I really do enjoy St. Patrick's Day more than most. I can honestly say that it has absolutely nothing to do with green beer. Now, if they had green wine... that might be another story.

So every year I like to dive into Irish recipes leading up to St. Patrick's Day. I've made Corned Beef, Shepherd's Pie, Irish Soda Bread, Irish Cream Donuts, and so much more.
