The Big Game is getting ever nearer and I am super excited, just as I always am! Game day food is a huge part of my love of sports. Things always get so hectic around the holidays, and for me this year is no exception. In fact, that is even more so the case. Chaos is my life right now. I got one of the best presents ever a little early. It was a complete surprise and delight that came out of no where, quick, fast, and in a hurry. It's left my mind in another place, and rightfully so.

A 'long lost' family member just came into my life; one that I wasn't sure would ever be a part of my world outside of merely knowing of their existence. It's been an amazing experience, although I have been entirely distracted between that and the holidays. I can't seem to focus on anything. I've left groceries in the car, misplaced numerous things, and at points can barely remember what it is I was talking about five seconds ago.

On top of that my little one managed to, at very least, sprain her ankle this past weekend. She's been kept home from school for two days now, which always puts me behind with tending to her. Here's to hoping we don't need to go get x-rays!...

Skinny Spinach Stuffed Mushrooms

I got this lovely bottle of Gloria Ferrer Pinot Noir that I've had sitting on my counter and staring at me for a couple of weeks now. I've been pondering over what exactly I wanted to pair with it. With the holidays still in full swing, I thought it would be the perfect time to whip up another tasty and better-for-you appetizer that would be perfect for entertaining; sure to make your next elegant holiday party sparkle!

One of my most favorite things to pair with pinot noir is the earthy flavors of mushrooms that only bring out the brambly flavor of this red wine. Many few years back I had started making these spinach and cheese stuffed mushrooms, so I knew that they would be the perfect partner to my pinot noir....

Cranberry-Nut Cinnamon Chex™ Mix

My little girl is a huge Chex™ fan, and is also my big-little helper in the kitchen. I like to find fun and simple recipes that she can easily help me with, if not just do on her own. So, I decided that we should start a new tradition to “Mix up the Holiday Magic” with allowing her to pick out her favorite Chex cereal and we use it up in a recipe together.

This year we decided to go with the Cinnamon Chex cereal. I was able to find the perfect Chex Party Mix to make with it.

Seriously, this mix is delicious and couldn't be more easy to whip up. I was really glad that I decided to go with a sweet treat this time around instead of the savory ones that I've come to know, love, and almost expect. This cranberry-orange mix was a delightful change of pace. Plus, I loved that it was something I could let my little one help me with...

Citrus Fennel Salad & White Wine Vinaigrette

What can I say? I needed something bright and sunny in my life this week. This salad is just that. Bright and sunny.

Grapefruits tend to be aplenty here in Texas during the winter time, so I always like to do something fun with them to stave off the winter blues. Not like it's been very much like winter around here lately with a high of 75 in the forecast for the upcoming week here in Austin.

Even so, my spirits needed some lifting and this bright salad was definitely a step in the right direction since it has some of my most favorite things in it. Two of which I've been absolutely obsessed with lately; grapefruit and avocado!...

Blue Cheese Guacamole

If you haven't noticed already, I've been on a little bit of an avocado kick lately. I just can't get enough of these creamy, green, super healthy fruits! I guess that you could even say that I'm a little obsessed with them, which is funny consider that up until about five years ago I thought my mom was crazy for eating 'that green stuff'.

Clearly, I've grown up a bit since then.

Another of my obsessions, and something that I've loved since the moment that I tried it is blue cheese. I swear... I have dreams about it.
