Skinny Birthday Cake 'Cake Batter' Cookies

June 6, 2022 Amanda Plott

I've made a LOT of birthday style eats and treats before. What can I say? My kiddo and I love rainbows and sprinkles. And there's no time like the month of June to bust our the rainbow sprinkles and cake flavored amazingness. It’s pride month AND we I have a lot of family birthdays this month too! This is an older recipe, so I decide to go back and revisit it.

Originally I found the idea for these cookies and they looked amazing, but as most of you know I can't help but tinker around and put my 'skinny' spin on everything…

Blondies + Maple Cream Cheese Sauce

April 26, 2021 Amanda Plott
blondies10.jpg

It was my brother’s birthday celebration this past weekend, and it sure was a lot different from how it was last year for sooo many reasons. Thankfully vaccinations are in place and we got to celebrate together once again! In lieu of a cake though, my brother wanted blondies this year which I am totally down for! Don’t get me wrong, I love cake as much as the next girl, but there’s something to be said about a good blondie.

These blondies are my healthified take on the ones that you’ll find at one of those chain restaurants. It was always my most favorite dessert there. What with the warm blondie with white chocolate chips, some vanilla ice cream, and that AMAZING maple cream cheese sauce on top. Mmmm…

Skinny Creamy White Chicken Chili

November 2, 2019 Amanda Plott
creamy-white-chicken-chili8.jpg

It suddenly got freaking cold here, y’all! Really, for the past few days it’s been unseasonably cold. I think I heard that Austin had the coldest Halloween that we’ve had in 30 years or something? That’s pretty incredible. Despite the cold, we still had a lot of fun. And you’ll never find me complaining about it being a little chilly. (Pun intended.)

When it’s cold out, that means I can use my oven AND I get to make hearty stews, soups, and of course… chili! That’s where this Skinny Creamy White Chicken Chili comes in. It’s made DAIRY FREE. Yep, you heard right, a creamy chili with NO cream…

White Cheddar Beer Cheese

June 29, 2019 Amanda Plott
white-cheddar-beer-cheese4.jpg

It’s about to be America’s birthday and I figured it was time to celebrate with some beer. And cheese. To be pretty honest, I don’t think that I’ve ever had beer cheese. I’ve had wine infused cheese and cheese fondue with beer in it, but… that’s about the extent of it. Beer isn’t my personal favorite when it comes to choice of beverages.

Either way! Beer and cheese are pretty much staples of any American household. And beer cheese? Well, that’s about as American as it gets. It seems like Kentucky is the heart, soul, and birthplace of beer cheese. And this beer cheese here is a standard and traditional way to make beer cheese…

Irish Whiskey Blondies

February 15, 2019 Amanda Plott
irish-whiskey-blondies13.jpg

Now that Valentine’s Day is over, I’m already on the thought path of St. Patrick’s Day! I love St. Patrick’s day for a couple of reasons. One being that I’ve got some Irish blood in me. Another being that it’s my dad’s birthday. And of course… who doesn’t love an excuse to drink and pinch people? Don’t worry, there’s no green beer here.

Instead, I opted to start off with these lightened up Irish Whiskey Blondies. I based these blondies over some that I made a good while back now. And yes, there is actually whiskey baked right into these blondies. Enough to give the flavor and just a little kick…
