Simple Wasa Cracker Snack

April 23, 2019 Amanda Plott
wasa-snack7.jpg

My fridge, just like most fridges right now, is stocked full of hard boiled bright colored eggs. And no matter how prepared any of us are for it… we always always have leftovers that we just don’t know what to do with. Thankfully, I was hungry this morning and was forced to rummage through the kitchen to put together some sense of a breakfast/brunch/lunch bite for myself.

It’s the day before I go to the grocery store so my pantry and fridge are running on fumes right now. Pickings were slim, but! Somehow I managed. What do you need for this snack? Crackers. Avocado. Tomatoes. Hardboiled egg. That is all…

Low-Carb Chicken Egg Roll Bowl (Keto-Friendly)

February 25, 2018 Amanda Plott
egg-roll-bowl4.jpg

Alright, so I've been playing around with this recipe for a few months now. I keep telling myself every time I make it, that I'm going to take the pictures and post it up here. But, for one reason or another, it just hasn't worked out until now!

One of the problems has honestly been that this egg roll bowl is just so good that it's hard to not be scarfing on it long before you ever even make it to the table. It literally tastes like the filling of an egg roll, and we all know that's the best part of the egg roll...

Healthified Okonomiyaki (Japanese Pancakes)

January 13, 2017 Amanda Plott
okonomiyaki5.jpg

Originally when I posted this back in May of 2013 Mother's day happened to fall on my parents anniversary and unfortunately the day hadn't started off well for either me or my mother. I had the dilemma with my laptop, which I now have back, and my mom was having some car issues.

Needless to say, I went to pick her up and us three girls (my mother, daughter, and myself), decided to stop and have brunch in downtown Austin at a local hot spot...

Baked Egg & Avocado Bowls

January 2, 2017 Amanda Plott

Drool.

This is an oldie, but a goodie. I originally made these Baked Egg & Avocado Bowls back in 2013! So, to say that the photos needed some updating and the post needed a face-lift would be a bit of an understatement.

I had been wanting to share this recipe ever since I started this blog a whole 5 months before it actually made it into fruition. (That was now nearly 4 years ago! Can you believe it?!) It's super easy, healthy, and yes... tastes every bit amazing as it looks.

Who can say no to a warmed avocado with baked eggs, cheese, and bacon?

Not this girl.

I couldn't 4 years ago, and I still can't today!...

Naked Sriracha Turkey Burger

June 17, 2016 Amanda Plott

For a while now, I've been wanting to create a 'naked' burger. What's a naked burger? Basically it's a burger that is so good you don't need a bun. That's right. This is a bun-less burger! It sits here completely bare (except for a little drizzle of sauce) and couldn't be more proud of it.

Turkey burgers tend to get knocked on a lot with people making claims like they are dry or boring and bland. Honestly, I've not ever found that to be the case. I've always infused my turkey burgers with plenty of moisture and flavor. Today, I wanted that flavor to come with a little big of a spicy Sriracha kick!...

Crispy Tofu & Roasted Vegetable Buddha Bowl

April 5, 2016 Amanda Plott

It's National Soy Foods Month, and I couldn't be more excited. I've been working pretty hard lately to try and meet a more plant based diet. So to celebrate, I've created a perfectly light and flavorful plant powered Buddha bowl!

This Buddha bowl (or Hippie Bowl) has a base of purple cabbage, it's layered on top with roasted vegetables (brussels sprouts, butternut squash, and edamame) and crispy tofu fries that were paired with a perfectly spiced Skinny Sriracha Aioli - perfect for dipping! It's easy to make too! With just two baking sheets and the oven doing almost all of the work for you...
