Antipasto Eyeballs

Sometimes you just need a spooky little side dish or appetizer to really make your day. It’s been a rather rough few weeks between pom poms and covid running rampant through my house; infecting everyone even me. Thankfully, the vaccine left me with a really mild case and just a handful of minor symptoms. Now that everyone is on the mend, we can move along with Halloween preparation!

I’m calling this tasty treat ‘Antipasto Eyeballs’ because they look exactly like that. Fresh mozzarella, olives, and some prosciutto is all you need to make this funny little appetizer. Yep, that’s right - just three ingredients and a few minutes of time…

Italian 'Sub' Salad

One of my favorite 'sub' sandwiches is an Italian or a 'Grinder'. It's usually loaded with Italian meats such as salami and pepperoni, provolone cheese, and plenty of vegetables including tomatoes, olives, pepper rings and lettuce. Yum! It's a powerhouse of bold flavors with lots of zest and zing! Flavor, flavor, flavor.

Avocado Caprese & Olive Oil Caviar

I got to have some extra fun in the kitchen today with my lunch. With it still being rather hot here in Texas, I've been trying to keep my lunches pretty light and fresh. Caprese salads are always one of my staple go-to keeping it cool sort of lunches. They're easy to make, taste great, and are pretty healthy to boot.

I've had this little jar of olive oil caviar sitting on my counter for a while now. It's something that I haven't tried before and one of those things that I was nearly so excited to use that I couldn't think of a use for application that I felt would do it's genius justice. Then... it struck me!

Traditionally a caprese salad is drizzled with a little bit of olive oil, so I thought this would be the perfect way to show off the olive oil caviar in a simple and extremely tasty dish that takes little time and effort to toss together; using the olive oil caviar in place of the drizzle...

Mediterranean Olive Salad

As a health food blogger, I like to stay in the know about all the different diets and ways of eating that are currently being circulated. One of the ones that's become quite popular over the past few years has been the Mediterranean Diet.

The Mediterranean Diet is pretty simple and incorporates the basics of healthy eating; including fruits, vegetables, fish, whole grains, and limited unhealthy fats. Any way of eating that allows for olive oil and a few glasses of wine is a bonus in my eyes.

The basis of the Mediterranean Diet is eating primarily plant-based foods, such as fruits and vegetables, whole grains, legumes and nuts. Replacing butter with healthy fats, such as olive oil. Using herbs and spices instead of salt to flavor your foods. Limiting red meat and eating fish and poultry at least two times a week. Plus, red wine in moderation!

All of these things are pretty much how we eat in my house on a day to day basis...

Sometimes... my little one gets tired of eating a sandwich in it's usual form, and who could blame her? So sometimes I just have to get creative with what I already have on hand and planned out for the week.

One helpful tip I have recently fallen in love with, is to use dry spaghetti noodles in place of skewers for little ones. I know, right...? Super clever and a lot safer! This helps to keep from anyone getting hurt in the midst of lunchtime. Plus, they're edible. Who doesn't take a bite or two of a dry noodle when available?...

You know... the term '7 layer dip' always confused me as... I've never actually seen a 7 layer dip with exactly 7 layers. Seriously. Think about it...
