Cottage Cheese BLT Bowl

November 29, 2025 Amanda Plott

Who says you can’t have your BLT and eat it too—healthier, that is? If you’re a fan of the classic Bacon, Lettuce, and Tomato sandwich but want to skip the bread and load up on protein instead, the Cottage Cheese BLT Bowl is your new best friend. This dish takes all the tasty goodness of a BLT and flips it into a bowl that’s packed with fresh tomatoes, crispy bacon, and creamy cottage cheese, making it a perfect guilt-free meal anytime.

What Makes This Bowl So Good?

Protein-packed, low-carb, and full of flavor. Cottage cheese sneaks in a serious dose of protein and calcium without the heaviness of traditional cheese or mayo. The bacon brings that crave-worthy salty crunch, while fresh tomatoes and crisp lettuce add color, fiber, and crunch. You’ve got a bright, satisfying dish that feels indulgent but fuels your body right…

Turkey Wrapped BLT

June 11, 2023 Amanda Plott

If you're looking for a low-carb and gluten-free lunch option, then you're in for a treat with this turkey wrapped BLT. Instead of using bread, use turkey slices as a wrap for the bacon, lettuce, and tomato filling.

This twist on the classic BLT is not only healthier, but it's also just as satisfying. The savory and salty flavor of turkey pairs perfectly well with the crisp lettuce and juicy tomato, while the smoky bacon adds a rich flavor to the mix. This meal is easy to prepare and make-ahead, which makes it convenient for those who are busy but still want something delicious and nutritious for lunch…

Southwest Cobb Salad in a Jar

April 25, 2022 Amanda Plott

This is one spiced up salad! I’ve created it in such a way that it is perfect for being a jar salad; layered so that it stays fresh for 3-5 days in the fridge and is great to have on hand for a grab-and-go lunch that you can also enjoy on the go or not!

The whole idea for this salad is to layer it in such a way that it can sit stored in the fridge for a few days and is completely ready to eat as soon as you are. Everything is all included, even the dressing. The trick to it is the layering. All the wet stuff on the bottom and the dry stuff on top. Clever, right?…

Taco Salad Splits

November 12, 2019 Amanda Plott
taco-salad-split7.jpg

It’s cold outside! It’s so cold and frosty that school was delayed, and while it’s cold and not much else to do, my creative juices always kick into high gear. Today I decided to make some cute Taco Salad Splits with the bonus time that I had gifted to me by the weather.

So what’s a Taco Salad Split? Well, it’s a taco take on a banana split. Don’t worry, I’m not making tacos with bananas. But I am making these taco salads LOOK like banana splits.

This is probably the cutest way possible to make and eat your taco salad by the way…

It’s FriYAY and what does that mean in our house? Pizza day! How does that old jingle go?

Pizza in the morning, pizza in the evening, pizza at supper time!

That’s basically the law of the land around here. Even though my little one has pizza for lunch on Friday at school, she comes home and still wants to have pizza for dinner. Who am I to say no? It’s been a long week full of the first few days of school and we’re all pretty much exhausted at this point.

Of course, when we do pizza night at home, I like to stick to the better-for-you options while also loading us all up on our fair share of veggies. That’s where this Simple Italian Salad and Sweet Earth come into play...

It’s finally here. We’re down to the finally 7 days before school lets out for the summer for my kiddo and I honestly thing that at this point, I’m more excited than she is. I just want to get through the next few days and have the freedom of summer ahead of us. That being said, I’m also in the throes of getting beach-bum ready. And that means watching what I’m eating and doing all the more.

With my focus on all that, and summer being the season of snacks around here, I decided to make some fun Burger Bites! These Burger Bites are so good too. Perfect for a snack sort of light summer friendly meal or quick appetizer. They start out with a burger meatball paired with all the burger classics; tomato, lettuce, pickle, cheese, and of course a tater tot!…
