Skinny Cranberry Bliss Bars

Here’s another recipe from years back that needed an update in the looks department… but, not so much to the recipe itself! Here’s the original post below.

The madness is just about over here with the mass of holidays! Phew, thank goodness! I was happy to step back and have a few days to spend with my family, but now it's time to get back to work. Okay, so... here we go.

I've been wanting to make a skinny variation of the Cranberry Bliss Bar that they have Starbucks for a long long long time now. I have, in fact, had this recipe in my handy-dandy little note book for quite a while now (about two years actually) but for whatever reason it keeps getting pushed back each year.

Well, a few weeks before Christmas one of my aunts sent me a special request for a Skinny Cranberry Bliss Bar recipe. Healthy Banana Split

I LOVE banana splits. But, I’ll be the first to tell you that I haven’t had an actual one in yeeeears. In fact, I think the last time I had one was when I worked in an ice cream parlor. Yep! I worked in an ice cream shop when I was fresh out of college and before I got my real adult job as a graphic designer. It’s probably a good thing too. I got all my ice cream eating out of my system at a young age when I could afford the calories.

This banana split is a nod to the classic. But, it won’t leave you feeling guilty. Actually, this banana split is SO deliciously guilt-free that you can even indulge in it for breakfast. That’s what I did. I had this bad boy for breakfast and I couldn’t be more okay with it…

Skinny Mushroom & Asparagus Omelette

I’ve got to be honest. I’ve been skipping out on breakfast for a while now. With school starting back up after the winter break and a terrible head cold running rampant through the house… There just hasn’t been enough time in the day to fuss with breakfast. And the whole point of breakfast is just that… to break-the-fast of the night of sleeping.

They don’t say that breakfast is the most important meal of the day for no reason. It’s there to start your day off and get you in gear for the rest of the day. Trust me when I say that being ‘hangry’ is a real thing. Finally, I made plans this week to stick to my guns and be SURE that I started my day off right with actually eating breakfast again….

I really really really didn’t intend to have two soup recipes in a row, but that’s just how it turned out! Initially I made this Greek Lemon & Chicken Soup a week or two back as a test recipe, and it was so good that I just couldn’t help but make it again sooner than later. Especially as we’re rolling on into cooler weather and soup season.

For being a soup, this one is on the lighter and brighter side of the spoon with lemon and feta in it. Which can be a good thing as we travel on into winter and start in with those dreaded winter blues. Eh… who am I kidding? Tis’ the season, pumpkin season! It’s officially Autumn now, which means… pumpkins galore. Spooky 'Monster' Tacos

Cooler weather is coming… Halloween is coming! And being as it is my most favorite holiday, I’ve got to have some fun with it. I’ll be honest in saying that these are my standard, average, run-of-the-mill tacos that I make using extra lean ground beef and just a few other notable swaps along the way.

This time of year though? I like to make them a little spooky! With a few dollops of Greek yogurt, plain Jane tacos turn into MONSTER tacos! Mauahahaha.
