Instant Pot Strawberry Shortcake Cheesecake Bites

I know that I’ve made mini cheesecakes in the instant pot before, but I still have some strawberry powder and strawberry cheesecake crumbs that I need to use up and for whatever ever reason it just seemed fitting to put them together in these Instant Pot Strawberry Shortcake Cheesecake Bites.

The way I was able to pack so much strawberry flavor into these cheesecakes was to use a strawberry powder. It’s basically freeze dried strawberries that have been ground down to a fine powder. Strawberry Shortcake Waffles

I’ve made strawberry waffles before, but I was in a bit of a rush today so I thought instead of making them from scratch, I’d save some time with a box mix. Also, there’s a trick to packing as much strawberry goodness into baked goods as possible without adding moisture and that’s by way of powder!

Healthified 'Tortilla Trend' Crunch Wrap

I’m back at it today with anther ‘tortilla trend’ idea! This one DOES actually use a tortilla this time and it’s a play on the infamous crunch wrap that you can get at Taco Bell, but… it’s made healthified! So, how does one make a crunch wrap better-for-you? Well, I swapped out the giant tortilla for a 100 calorie spinach and seed one, but really any 100 calorie flower-like tortilla will work here.

I also used vegetarian ground meat in mine, but mostly because that’s what I had on hand. Lean ground turkey will work here too. Other than that? I used my own seasonings and spices, and also a plain fat-free greek yogurt in place of the sour cream. Tada. Healthier crunch wrap!…
