Sometimes in my house we just like to have what we call ‘snacky dinner’, which usually means finger foods of one kind or another. This time around I was feeling chips and dip, but I wanted something with a little bit of a twist to it. That’s where this Poblano Chicken Alfredo Dip comes in. This Poblano Chicken Alfredo Dip is super easy to make and it’s tasty too. It’s where Italian alfredo comes together with the spice of a poblano pepper.
The spice level on this dip varies, depending a lot on how spicy your pepper ends up being. Mine was really tame which is why I ended up also using a little bit of pepper jack cheese too. And even then, it was still pretty mild.
This twist on a classic dip is creamy, flavorful, and healthier than the original. Instead of using heavy cream and tons of cheese, this version a remade light alfredo sauce. The addition of poblano peppers and chicken gives the dip more depth of flavor and a boost of protein.
I served it up with some thick tortilla chips. This Poblano Chicken Alfredo Dip Lightened Up is sure to be a crowd-pleaser at any party or gathering.
Poblano Chicken Alfredo Dip
Ingredients
- 1/2 C. Poblano Queso Chicken Sausage
- 1 Yellow Onion, Diced
- 1/2 C. Cooked & Shredded Chicken Breast
- 1 (15 Oz.) Jar Light Alfredo Sauce
- 1 Roasted Poblano (Skin & Seeds Removed), Diced
- 1 C. Shredded Reduced Fat Mozzarella (And/or Pepper Jack Cheese)
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of a # baking dish with non-stick spray; set aside.
- Lightly coat the inside of a small skillet with non-stick spray. Place the 8 Oz. Poblano Queso Chicken Sausage and 1 Yellow Onion into the small skillet and cook over medium-high heat until the sausage is browned and the onion is tender. (About 5 minutes.)
- In a medium size bowl, stir together the sausage and onion mixture, 1/2 C. Cooked & Shredded Chicken Breast, 1 (15 Oz.) Jar Light Alfredo Sauce, 1 Roasted Poblano (Skin & Seeds Removed), and 1/2 C. Shredded Reduced Fat Mozzarella.
- Transfer the mixture to the prepared baking dish and sprinkle the remaining 1/2 C.Shredded Reduced Fat Mozzarella on top.
- Cover and place in the oven to bake for about 20 minutes or until heated through and the cheese on top is melted.
- Once done, remove from the oven and enjoy right away with your choice of dippers!
