Today I wanted to keep things rather simple for breakfast. Simple, but tasty and dairy-free! Like I've said, I'm trying to be a little more plant based lately. I decided that a breakfast bowl was the way to go, so I grabbed one of my leftover grapefruits from the fridge and knew exactly what I wanted to do.
I used the juices of the grapefruit along with some local honey to make a sort of faux fruit cocktail to go atop one into my breakfast bowl. A 'not quite ripe' banana will work best here.
If it's an overly ripe fruit you might just end up with a bowl of mashed banana instead and nobody wants that!
Of course, I had to have a little bit of a crunch factor on top with some local low fat granola to top it all off and pull everything together. One of the best parts though, is what was under all the fruity goodness.
To keep this breakfast bowl dairy-free, I used one of my favorites; Silk Diary-Free Vanilla Yogurt Alternative. It's the perfect way to remain plant based and still get that smooth creamy texture that you'd expect from a yogurt alternative! Plus, there's 6 grams of plant-powered protein in one serving and it's Non-GMO Project verified; so you know you're getting nothing but the good stuff here.
There's actually a nice new size available in Silk Diary-Free Yogurt Alternative (vanilla or plain) that gives you 24 oz. to enjoy! It's perfect for whipping up recipes such as this one, blending into smoothies, or just enjoying in a bowl with your favorite mix-ins.
This breakfast bowl is the perfect way to get your day started, it's bright, light, and full of flavor that will give you that needed boost with over 7 grams of protein all together to get through the morning hours.
And trust me when I say that I needed all the help that I could get this morning.
Breakfast is one of the most important meals of the day, and my optical migraine from ignoring it this past weekend is evidence of that. With how quick and easy this is to toss together, there isn't an excuse to not enjoy this breakfast bowl!
