Chickpea Stew & Herbed Greek Yogurt
Ingredients
- 1 C. Plain Fat Free Greek Yogurt
- 15 G. Fresh Dill, Finely Chopped
- 3 Tsp. Capers, Drained
- 2 Cloves Garlic, Minced
- 1 Lemon, Zested
- 2 Tbsp. Extra Virgin Olive Oil
- 1 Pint Cherry Tomatoes
- 2 Garlic Cloves, Finely Minced
- 2 (14.5 Oz.) Cans Chickpeas, Drained
- 1/2 C. Low Sodium Chicken or Veggie Stock
- 3 Tbsp. Harissa Sauce
Instructions
- Place the 1 C. Plain Fat Free Greek Yogurt, 15 G. Fresh Dill, 3 Tsp. Capers, 2 Cloves Garlic, and zest of one lemon into a small bowl together and stir to combine. Cover and set in the fridge to chill.
- Heat 2 Tbsp. Extra Virgin Olive Oil in a medium pot over medium high heat.
- Add in the 1 Pint Cherry Tomatoes and cook for about 5 minutes or until softened, blistered and maybe even slightly charred.
- Lower the heat to medium and add in the 2 Garlic Cloves. Cook for another couple of minutes or until the garlic is fragrant.
- Add in the 2 Cans Chickpeas, 1/2 C. Low Sodium Chicken or Veggie Stock, and 3 Tbsp. Harissa Sauce. Simmer for a few minutes.
- Divide evenly among bowls and top each with some of the herbed greek yogurt.
