Bacon, Chive & Cheddar Eggs in Clouds

Weekends are for sleeping in, having fun, and experiments in the kitchen. While my mom has been here visiting me, we've been having a lot of fun taking turns with playing around in the kitchen for breakfast in the mornings. And today was no different. We've discussed 'eggs in clouds' a few times before, but today was the day!

It's a pretty simple little breakfast that looks far more impressive than it really is with its handful of basic and minimal ingredients.

The basics of the egg-in-a-cloud are separating the egg yolk from the whites, then whipping the whites into 'clouds', and replacing the yolk into the center to bake to perfection. My mom and I both agreed that whipping the whites into the perfectly white 'fluff' made it seem like we were eating a lot more than we actually were. It's really an impressively filling dish.

I added just drizzle of some hot sauce over the top of mine for bonus color and a kick of spice. Yum! I'm pretty sure that these are going to be a part of my regular rotation for breakfast now.

I can't wait to start playing around with other flavor combinations and varieties.
