One of my fondest memories from when I was little was my mom making her banana nut bread. It wasn't something that she would make very often, usually a treat around the holidays when she had time to bake. Friends and family will often find it tucked away in their yearly basket of baked goods at Christmas.
Even still to this day she makes it every now and again for all of us, especially my little girl, to enjoy. But, with summer and hotter weather closing in on us here in Texas... it's time for me to start cutting the use of my oven way down. So, to sate my craving for the dense and rather out of season bread, I've opted to turn it into a parfait!
This parfait is super simple, using only 4 ingredients and taking minimal time to prepare. It's easy to toss together in the midst of the rush in the morning. I've layered with thick and creamy Greek yogurt (Icelandic is also a good alternative), low fat granola, pecans, and plenty of fresh banana to really pack that banana nut flavor in there.
I love that this breakfast is light and also rather filling without being overly indulgent. You can enjoy this breakfast treat guilt free while staying nice and cool during the warmer months of the year. A win-win sort of situation when it comes to that familiar banana nut flavor!
The different flavors and textures in here are fun too! Crunchy, sweet, salty, and smooth.
If you wanted to be extra bold, you could add a drizzle of honey or pair it with something else for a complete little all inclusive breakfast in one.

1 Medium Banana, Sliced
2 Tbsp. Chopped Pecans
