As the weather is cooling off, I’m starting to migrate to a lot more soups and stews. This 'Creamy' Chicken Enchilada Soup is a new family favorite. It’s easy to make and takes no time at all in the handy-dandy instant pot. It’s perfect for a Tex-Mex inspired dinner option. Especially on these busy weekday nights!

Not only is it super delicious - think cream chicken enchiladas in the form of a soup, but it’s also gluten free and low carb too. As we get closer to my all time favorite month of October, I naturally start to gravitate towards beer-centric recipes. I guess it has something to do with Oktoberfest, that or there tends to be more pumpkin spice beers readily available, and those are super fun to play with in the kitchen.

'Everything' Salad

This 'Everything' Salad is just that, everything. It’s based off the famous ‘'Everything' bagels that are known for their ‘everything’ seasoning that you can now buy at just about any grocery store. While I’m not generally a fan of croutons, I decided to grab some of the bagels and use them to make croutons for the salad. That paired with a homemade dijon dressing and some cream cheese makes for one great salad.

I decided to leave this salad meatless, making it a great option for a meatless Monday meal, but feel free to add some chicken or whatever other protein you might enjoy to the salad. This salad would also be great for a meal prep lunch box. Make it ahead of time and enjoy through the week!…

Skinny Baked Garlic Parmesan Boneless Chicken Wings

I’ve got to say… I’ve been holding off on making chicken wings for a lot of reasons. Mostly because I don’t like to eat meat off the bone, and also it can be pretty tricky to make wings in a better-for-you way. That’s probably because most wings are deep fried and the closest thing I have to that is an air-fryer which isn’t quite the same.
