Brain Meatloaf

I’ve taken my classic meatloaf recipe and molded it into the shape of a brain for a fun Halloween inspired twist. My meatloaf is made with plenty of vegetables loaded into it, onion, bell pepper, and zucchini too! So it’s healthified and lightened up while still being scary good.

Usually meatloaf is made with ketchup, but I decided to use tomato sauce and tomato paste along with salt and pepper to lower the amount of sugar and also to be able to control the level of salt. It’s a good little swap that doesn’t effect the taste or texture and gives you a lot more bang for your buck!

Pumpkin Banana Bread

A plain and simple banana bread that’s loaded up with pumpkin flavor and warm spices of the Fall season. And yes, I can post pumpkin recipes all I want now that it’s officially FALL. Even though I’ve already been posting them. Now you can have even more of them!

This is a very traditional banana bread that I’ve added pumpkin and spices to. That’s really all. There’s no nuts. No chocolate. No other added things. Just banana and pumpkin. Simple and as tasty as can be. This bread, just like any breakfast style bread, is perfect to make on the weekend and have ready for breakfast all week…

Club Sandwich

Who can say no to a traditional club sandwich? This Club Sandwich is made just a little better-for-you with a few simple swaps that keep it perfectly classic and yet guilt free! As with any club sandwich, this one starts out with sliced deli ham and turkey, and then paired with bacon, cheese, tomato and some lettuce. All on some toasted bred with a smear of light mayo.

It’s good stuff and goes well with a light salad, a cup of soup, or even some salt and vinegar kettle chips like I had. It was simple, classic, and so so good! Of course, I wouldn’t say no to some pickles on the side too…

Burger Bowls

Coming in LATE today with these Burger Bowls. What is it? A burger? A bowl? The answer is YES. These are bowls made out of burger and then loaded up with all the burger goodness you know and love. Lettuce, cheese, pickles, etc. It’s all here in one beefy bowl.

One of the best parts of these burger bowls is that they are so SO easy to make and still look wildly impressive. It’s one of those super clever ways of serving dinner that kids and adults will both be able to enjoy and make their own with their own toppings…

Mini Air-Fryer Breakfast Tacos
