Japanese Egg Salad

It doesn’t get any more simple than this right here. This Japanese Egg Salad is made with just 4-5 ingredients and takes hardly any time at all to make and the end result is creamy, light, and delicious! So what makes this egg salad Japanese? The secret is in the mayonnaise! This egg salad uses kewpie, which is the Japanese version of mayonnaise. But, don’t worry! You can find it at most grocery stores.

American mayonnaise is made with whole eggs and white vinegar. Kewpie is made with egg yolks and rice vinegar or apple cider vinegar. Kewpie eggs up being sweeter and has less tang. It’s also a lot richer and creamer too!…

Skinny Instant Pot Breakfast Casserole

Breakfast is served! This Skinny Instant Pot Breakfast Casserole is quick and easy to make with no usual overnight sitting required. Plus, it’s low carb and keto friendly. Did I mention that it’s loaded with plenty of bacon and cheese too? Yep! This casserole is definitely a new breakfast favorite. From what I made this morning, I’ll have plenty leftover for a few more breakfast for myself this week!

I even managed to sneak in some veggies by way of peppers and onions. It’s good stuff I tell you. For this particular breakfast casserole, I went with a standard maple bacon, but really any bacon would work. Ham & Cheese Omelette

I don’t know about you, but we had ham as part of our Christmas dinner and I managed to keep some on reserve for leftover breakfast this morning. This Ham & Cheese Omelette is one of my favorite ways to use up leftover ham. I based this omelette off of a few others that I’ve made in the past that packs an omelette up with as much protein as possible.

I like to sub in egg whites for part of the egg in any omelette. But, I try to keep at least one yolk in there for some color and flavor. Other than that, I love to put cottage cheese in my omelettes because it gives a bit of a boost to the protein and also bonus melty cheese goodness…

Instant Pot Poached Eggs

It’s been a good long while since I had some eggs for breakfast and if I’m being very honest? I’ve never had a poached egg before in my life. I’ve had them just about every other way there is other than poached. So, this morning I decided to try my hand at it. However it’s summer and I’m lazy. Instant Pot to the rescue!

Spring Vegetable Crustless Quiche

I’ve made a lot of crustless quiches in the past, and with Spring in full swing, I decided to make one that used up the bounty of veggies that Spring offers up such as spinach, mushrooms, and asparagus. Unlike some of my other quiches, I wanted this one to be the absolute start of the plate. So, I stuffed it full of veggie goodness, used more eggs, less milk, and ended up with a low calorie, high flavor dish that was perfectly suited to Spring.

I think one of my favorite things about quiche has to be that it can literally be enjoyed as a meal at any time of day; breakfast, brunch, lunch, dinner… any and all!
