Cheesy Garlic & Herb Pull-Apart Bread (Bread Machine)

April 10, 2020 Amanda Plott
garlic-herb-bread4.jpg

I’ve been using my bread machine at least a couple of times a week currently, largely due to the current limitations on certain things you can buy right now. Thankfully I’ve had a pretty steady stream of flour and with my handy-dandy bread machine, well… the sky is the limit!

I decided to get crafty this time around and instead of making a plain jane loaf, I made a pull-apart loaf that didn’t stop there. This pull-apart bread also has layers of cheese, garlic, and herbs tucked in between each pull-and-peel piece of warm fresh homemade bread…

Skinny Summer Strawberry Scones

April 4, 2020 Amanda Plott
summer-strawberry-scones2.jpg

It may not be summer time just yet, but I think we could all use some sunshine and warmth right now in our lives. So, I thought I would go ahead and make these Skinny Summer Strawberry Scones and update the photography in the process.

I've made scones a handful of times in the past few years, and while it took a few attempts at first I’ve gotten the process of making these scones down well enough. The recipe is surprisingly similar to that for Irish Soda Bread…

Chicken Piccata

March 3, 2020 Amanda Plott
chicken-piccata2.jpg

Let’s face it. Italian food is probably one of everyones favorites. And chicken piccata is one of the staples of Italian food. The tartness of lemon with the salt of capers all come together with crisped cooked chicken breast that’s perfect to be served over a bed of pasta or even all on it’s own. Either way, it’s the star of the show!

This chicken piccata is made without any cream. That’s right. The cream in chicken piccata is completely unneeded. You can come out of it with less calories while still having a delicious creamy sauce for your chicken…

Whole Wheat Bread Machine Breadsticks

February 17, 2020 Amanda Plott
breadsticks10.jpg

Back when I first got my original bread machine, one of my favorite things to make with it was homemade breadsticks. They always turned out pretty damn great. Light, fluffy, and delicious. Way better than the pre-made dough you can get at the store in a can. Then again, almost anything homemade is better than pre-packaged.

These Whole Wheat Bread Machine Breadsticks are super simple to make and takes very little in the way of ‘hands on’ time. The bread machine does the lot of the work. All you have to do is roll the dough out and bake. Easy enough though, right?…

Old Fashioned Spaghetti Sauce

December 27, 2019 Amanda Plott
old-fashioned-spaghetti-sauce6.jpg

So obviously, I’m not an Italian lady. My roots are a lot Irish and … well, as many others out there, a plethora of other things. That being said, my love of food stems very much so from my fond memories of sitting on my great-grandma’s kitchen counter and watching her cook for hours on end.

Lengthy cooking times tend to be a thing of the past these days, especially with our fancy gadgets like crock pots and pressure cookers. Trust me, I’m a HUGE fan of the quick and easy recipes, but I’m here to warn you that THIS recipe is not quick by any means. This Old Fashioned Spaghetti Sauce takes it’s time with cooking for a whole TWO HOURS. And I promise, it’s worth every minute of that cook time…

I love Italian food. I mean… who doesn’t? One of my favorite Italian dishes is chicken parmesan. But, with things being so chaotic around the house right now, I thought it would be best if I could find a way to enjoy chicken parmesan as quickly and easily as possible. Chicken Parmesan Dip it is!

This Chicken Parmesan Dip has all the pieces and parts of a chicken parmesan, but is put together in the form of a perfectly dipable dish! Cooked chicken, marinara, ricotta, mozzarella… and of course, parmesan! After all, you can’t have chicken parmesan without the parmesan…
