April 21, 2016 Amanda Plott

Well, I hope that everyone else is dry and enjoying the warmer spring weather! Here in Texas, we're getting nothing but rain. Not that I'm complaining, I mean... let's face it, we need it desperately still just as most of the rest of the country does.

Despite the weather, I'm still dead-set on getting my grill on this week (even with it raining me out of my own backyard.) Thank goodness for indoor grills though! It has been my best friend for a few days now since I had something planned nearly every day this week that was intended to be grilled. Thank you, mother nature...

Grilled Feta Skewers

April 19, 2016 Amanda Plott

The rain here in Texas has been crazy these last few days, and we still have more to come. Houston, you're in my thoughts! Despite the turn of weather (April showers bring May flowers...), I'm still getting my grill on this week. One way or another.

To add a little color and brightness to my life during this rather gloomy day, I decided to grill up these veggie-full skewers that couldn't be any more easy to make, or any more delicious. Let's face it, I'm a sucker for cheese is just about any form or fashion...

Skinny Vegetarian Jalapeño Poppers (Sponsored)

July 6, 2015 Amanda Plott

This post was brought to you by Collective Bias, Inc. and it's advertiser. I received compensation to write this post … but, all opinions expressed are my own. #GrillWithATwist #CollectiveBias

My dad is the grill master of the family and has been for many years now. One thing that has become a staple item anytime my family gets together to grill (no matter the occasion) is jalapeño poppers!

My family has always done poppers a little differently. Originally, we tried to stuff the jalapeños with a cream cheese and cheddar mixture and then wrapped them with bacon, but... the bacon never cooked through evenly. So, one day we got smart, chopped cooked bacon up and mixed it in with the cream cheese mixture to stuff in the jalapeños that way. We've never breaded our poppers in anyway. My dad always felt that the breading was unneeded, and I must say that I agree. It's just wasted calories.

These jalapeño poppers are our standard way of making poppers, but with one grilling twist this time around, making them perfectly vegetarian! Because after all, meatless can still be delicious....

Healthified Jarlsberger

June 30, 2015 Amanda Plott

What's a Jarlsberger? It's basically an all American burger that's covered with a delicious melted slice of Jarlsberg® cheese! I've take this traditional burger and made it more my own by adding in some sneaky vegetables and some seasoning to the lean meat; making it all the more guilt free for your grill and you this summer.

Trust me, you won't even know the vegetables are there, and neither will anyone else for that matter! Adding veggies to my burger meat has been something that I've been doing for all of my cooking-life. It's one of my secret weapons for making a good moist burger, even when using poultry or a lean meat!

As an added bonus to a good juicy burger, you get the keen knowledge that you just got some wholesome vegetables into your friends and family...

California Chicken & Vegetable Bowl (With Green Goddess Dressing)

June 22, 2015 Amanda Plott
california-bowl1.jpg

This post is part of a social shopper marketing insight campaign with Pollinate Media Group®, Birds Eye®, and Tyson® but all my opinions are my own. #pmedia #FastFreshFilling http://my-disclosur.es/OBsstV

The heat of Texas summer is upon me! The last couple of weeks I've been doing everything possible to use my oven as little as I can manage. It's amazing the difference that just a few minutes of the oven being on can make when it's above 90 degrees outside. So, I'm starting to get really creative with creating tasty and easy meals during the busy and rather hot days of summer without having to give up nutrition in the process.

I was wanting something fresh and light that also involved avocado, and then I remembered this Green Goddess dressing that I made a few months back that I was absolutely in love with. So, I decided I wanted to make use of it again in this California style Chicken & Vegetable bowl. Perfect!

The only change that I made to the dressing this time was around was using some fresh basil in placed of the thyme or tarragon that I had used before. Fresh basil just screams summer to me...

Mustard & Jalapeño Grilled Chicken Sandwiches (Sponsored)

April 28, 2015 Amanda Plott

This post was brought to you by Collective Bias, Inc. and it's advertiser. I received compensation to write this post … but, all opinions expressed are my own. #KetchupsNewMustard #CollectiveBias

It's beginning to feel a lot like summer around here and I'm more ready than ever to fire up the BBQ grill outside to cook up some festive summer inspired foods. This spicy Mustard & Jalapeño Grilled Chicken Sandwich is the perfect send off into BBQing season.

Ugh, seriously the poor grill has been stuck under it's cover for far too long by now. It's time to bust that big boy out and dust him off!

The mustard marinade and sauce used on this chicken is fantastic. It's sweet, it's spicy, and it's full of flavor! Plus, it's super easy to toss together in the midst of a chaotic morning or on a lunch break even to leave your chicken marinating while you go about the rest of your day. That's one of my favorite things about mustard, you don't have to do much to it to get something amazing in the end when being used as a marinade or sauce...
