Homemade Skinny Nacho Cheese

March 29, 2016 Amanda Plott

Cheese is my Achilles' heel, there is no question about that. I've come to the conclusion that it is one thing that I am unwilling and unable to rid from my diet. I honestly think that if it were an option, I would live on the stuff.

Being a Texas girl and spending my fair share of time in San Antonio, I've come to know many a Tex-Mex. One could even go so far as to call me a Tex-Mex aficionado. A connoisseur of the Americanize and Texified variations of Mexican style foods. And as such, I know over the years that I've eaten my weight in nachos and nacho cheese.

So, today I decided to take some steps in lightening up and homemaking this classic nacho cheese sauce that we all know and love. Drool...

Skinny Buffalo Chicken Sandwich On-A-Stick (Sponsored)

Being a Texas girl, and with Austin being part of and also sandwiched in between major Texas cities that are well known for their different sports teams, we're pretty into homegating around here. And as such, I'm always looking for new, fun, and clever ways to make my Game Day spread easy and delicious.

Enter these amazing buffalo chicken sandwiches on-a-stick! Two things almost always come to mind for my game day eats; buffalo sauce and sandwiches, so why not pair them together in a way that would be perfectly sized as a grab-and-go nosh worthy bite?

Now, I've made a sandwich on-a-stick before so I was pretty sure that these would be just as amazing and would also go well with my wine of choice. When it comes to Game Day, it's always fun to think outside of the typical wine and cheese pairings...

Skinny Spicy Chicken & Artichoke Bites

January 25, 2016 Amanda Plott

With the biggest football game day of the year just around the corner, and even more sports about to start back up with their seasons I'm delving into game day foods. Finger foods and little stackable grab-and-go bites are what I'm all about. So any excuse for party food is a good excuse to me.

Today I wanted to try something a little different, using one of my favorite dips in a new and different way. Generally my game day spread is full of dips and popable bites, and this is definitely one of my new favorites...

Healthified 7 Ingredient Chili (Sponsored)

November 4, 2015 Amanda Plott

This post was brought to you by Collective Bias, Inc. and it's advertiser. I received compensation to write this post … but, all opinions expressed are my own. #YesYouCAN#CollectiveBias

Oh, man! I'm just settling in after another weekend away. I took my little one out of town to see friends and family for our Halloween celebration this year. It was so much fun to get out and do something different, but with traveling and holidays always comes stress!

To make things easy on myself this week, I decided to again have easy, stress free cooking going on in my kitchen as I settle back into my groove and also start preparing for the next holiday. One of my favorite too. Who doesn't love a holiday centered around food?

As it gets cooler outside, one of the first things that comes into my mind as a great dinner option is chili, and my mom makes one of the best, but... it takes time.

So, can you make a better-for-you chili with just a few ingredients without sacrificing any flavor?...

Skinny Cheeseburger Soup

October 22, 2015 Amanda Plott

I must admit that I have been in total soup mode lately. I think it's something that happens to me every fall once it finally starts to cool off here in Texas. Of course, it doesn't help that there's been a head cold running around the house for a couple of weeks now too.

Thankfully, we're going to even be getting down into the 70's during the days this week along with some chances for rain, whoohoo! Just in time too. There's a fall festival at my daughter's school this weekend and I'm ready to get into the spirit of Halloween all the more. Pun totally intended.

One of our traditional family favorites no matter the time of year is definitely cheeseburgers. Generally, if we can't think of anything else to grill/cook we end up with burgers and hotdogs. Today I'm taking this delicious staple and transforming it into a better-for-you hearty soup!...

Skinny Buffalo Blue Cheese Deviled Eggs

October 12, 2015 Amanda Plott

This stuff right here is what dreams are made up of. I've a southern girl, so deviled eggs are a staple to any holiday or 'special event'. Instead of the same ole' same ole', I love to play around with different combinations.

My last adventure with deviled eggs was quite a big hit, so I decided to try my hand at it again. This time though, I wanted to make my deviled eggs 'game day friendly'. How do you make something more game-day inspired than to throw buffalo sauce at it and call it a day?

Plus, their orange and white just like the colors of my favorite local college football team. Hook'em!...
