Being a Texas girl, and with Austin being part of and also sandwiched in between major Texas cities that are well known for their different sports teams, we're pretty into homegating around here. And as such, I'm always looking for new, fun, and clever ways to make my Game Day spread easy and delicious.
Enter these amazing buffalo chicken sandwiches on-a-stick! Two things almost always come to mind for my game day eats; buffalo sauce and sandwiches, so why not pair them together in a way that would be perfectly sized as a grab-and-go nosh worthy bite?
Now, I've made a sandwich on-a-stick before so I was pretty sure that these would be just as amazing and would also go well with my wine of choice. When it comes to Game Day, it's always fun to think outside of the typical wine and cheese pairings.
As a wine lover, I know that fruity, slightly dry, and crisp wines are great companions for almost all the food on your Game Day spread. So are juicy reds and bright, fruit-driven whites.
Since game day foods are simple and easy, the wines should be, too, at prices that won't bust the budget if you're hosting a party. That's why Black Box Wines are always a perfect pairing with my game days (available for about 40% less than comparable bottled wines!)
Generally speaking, buffalo sauce can be a nightmare to try and pair wine with. The heat and the vinegar can be overwhelming, and when you serve buffalo anything with blue cheese, well - there's just a lot going on! That's why I decided to make these sandwiches on a stick with a lightly smoked deli-style buffalo chicken from my local market's deli. The acidity of the Black Box Chardonnay was a great match for the vinegary sauce, while the mild sweetness tamed the spice and heat.

Ingredients:
1 Wheat Hoagie/Steak Bun, Cubed into 16 Pieces
1/4 Lb. Deli Buffalo Chicken Breast, Sliced Thick & Cubed into 16 Pieces
3 Romaine Lettuce Leafs, Cut into 16 Pieces
4 Oz. Reduced Fat Blue Cheese, Cubed into 16 Pieces
4 Oz. Fat Free Cheddar, Cubed into 16 Pieces
24 Grape Tomatoes
8 Wooden Skewers
Optional Add-Ons: Buffalo Sauce, Ranch Dressing/Dip, Blue Cheese Dressing/Dip
Directions:
Put together your sandwich on a stick with each skewer containing 2 cubes of bread, 2 cubes of chicken, 2 pieces of lettuce, 2 cubes of blue cheese, 2 cubes of cheddar and 3 cherry/grape tomatoes.
Serve with your favorite wine pairing. I enjoyed mine with Black Box Wines Chardonnay!
Enjoy right away or add a few drops more of buffalo sauce for an extra kick.
Some light ranch dressing or blue cheese dip would be nice on the side as well!
