If you haven't noticed by now... I'm not exactly a fan of sea food.

Yikes! I know, I know... one of the leanest proteins and I won't eat it. And, to top it off... I have absolutely no reason as to why I don't like it. I lived on the Oregon coast for five years during my childhood and I can still count on one hand the amount of times that I've eaten seafood knowingly.

It's strictly mental. I can't say that it's the taste, texture, allergy or anything else. I just can't bring myself to eat seafood.

That being said, it's still ocean week here over at my house and I wanted to give this recipe a bit of an update in the looks department. Don't worry though! I haven't change the recipe at all…

I've been playing around with egg bites for a while now, and I've come up with a few fun flavors to change it up from week to week. Yes, homemade egg bites are generally in my personal regular rotation for one of my usual breakfast options. They are ridiculously easy to make, taste great, and are perfect for meal prepping. Everyone should know by now that I am a cheese freak. A cheeseoholic. A cheese master. ...I guess one could even say that I'm a bit... cheesy. Buh-dum-psssh. Queso is usually my go-to cheesy wonder of amazingness, but I thought today I would change it up a bit and go with something a bit more traditional and Americanized.

Instant Pot Corned Beef & Cabbage

By now we all should be well aware of the fact that I am completely smitten with two things; my Instant Pot and St. Patrick's Day. So, this week I thought... why not put the two together? But could it be done? I've made my fair share of corned beef before and I thought it would be the perfect Irish bite to go from crockpot to Instant Pot.

I did have one concern and that was if the corned beef would turn out as tender being cooked in the Instant Pot rather than low and slow all day in the crockpot. And the answer is a resounding... YES!...
