Healthy Gingerbread Loaf

It's that crazy time of year when it just doesn't seem like there's enough hours in the day! I'm busy shopping, wrapping, decorating, and getting everything in order for Christmas and New Years. Come on 2017. That being said, I woke up this morning and decided to get this Healthy Gingerbread Loaf whipped up and ready for the influx of company to enjoy.

Skinny Whole Wheat Egg Nog Pancakes

It's day one of having my little girl home and officially off of school for the holidays and I could not be more excited! On top of all of the holiday fun and festivities, she's started getting her 6 year molars and her first 'big girl' tooth. Looks like the tooth fairy will be stopping by in the next month or so!

I saw this fabulous idea a long time ago on Pinterest, and I just knew that I had to make a version of it for myself. I've never been one for frying things and I will do just about anything I can to lighten up food; whether it be lessening the calories, using more wholesome ingredients, or some other clever way in which I see fit.

These Breakfast Egg Rolls with Sausage Gravy are where it's at! This has to be one of the most tasty and fun breakfasts that I've put together in a good long time, and it's just a pity that I was the only one home this morning to enjoy them. Breakfast Stuffed Portobello Mushrooms

It's just a couple of days before Thanksgiving and I'm running around like a mad woman to get things done. This year we're doing things a bit different... getting the family the heck outta here for some untraditional turkey day glamping (that's camping in a glamorous manner.) I'll be the first to admit that God didn't build me in a manner that would suffice actual 'camping'. I enjoy hot showers, beds, central air, and food far too much to be the outdoorsy type.

Glamping though? Sign. Me. Up!

I got a small cabin in the woods rented out for a couple of days and I am all about this fancy-pants version of camping. Awe-SOME. While I'm getting myself in order and ready to head out on the road, I can't neglect breakfast this week. So, I'm hot on the tails of these AMAZING Breakfast Stuffed Portobello Mushrooms! Seriously. Skinny Pumpkin Spice Cream Cheese Crepes

Last weekend my dad was here to visit for a few days, and that always means that I get spoiled on crepes. The man is basically famous for his crepe making skills, and naturally I'm always pushing him outside the box with interesting flavor ideas. We've done everything from red velvet to a more savory chive and cheese crepe. His go to combination is and has always been a plain crepe with a strawberry cream cheese filling, and trust me when I say that those are absolutely out of this world.

But... it's pumpkin season and I'm going to take full advantage of it. So, we ended up making these pumpkin spice crepes filled with a lightly sweetened cream cheese  mixture. Yum! One of my wonderful cousins is a pumpkin spice fanatic just like I am, so I know she's going to have to talk my dad into making these sometime for her too! Sick'em Sam!...

As we get into the holidays, I'm all about speed and ease in which I make my meals. But, that doesn't mean that I have to sacrifice taste or the more wholesome options for myself or my family. This roasted red pepper dip is super tasty, easy to make, guilt-free, and is so versatile that you could eat it with any meal; breakfast, lunch, or dinner!
