I’m not going to lie, I’m excited and yet a little apprehensive about Spring this year. Last year about this time is when the whole world went to shit. Here’s to hoping that this year will be at least a bit better, even if it still is a little different from years past. Until we know for sure? PB&J Cinnamon Rolls

Sometimes you just have to put two of your favorite things together. Peas and carrots. Cinnamon and sugar. Peanut butter and jelly. PB&J with cinnamon rolls. These PB&J Cinnamon Rolls put PB&J into cinnamon rolls! That’s right. Peanut butter. Jelly. And cinnamon roll goodness. And after this past week? I could use some of my favorites in my life.

Honey Tea Loaf Cake

When it snows. I bake. Okay, okay. In all honesty, I planned on making this Honey Tea Loaf Cake long before there was confirmation of snow in the forecast. But, it was a really nice treat to get to enjoy on a frosting winter' morning. And goodness gracious is it frosty today! Seriously. We have the coldest ‘high’ temperature on record today in Austin.

This Honey Tea Loaf Cake is… amazing. The pictures just don’t do it justice. The texture is very much so akin to a pound cake in that it’s dense, moist, and also somehow light. This loaf cake is par-baked before being finished off baking with a honey drizzle soaking into the loaf. The end result is this delicious cake with a natural line of honey ‘filling’…

Baked PB&J Oatmeal

Who knew you could enjoy a PB&J for breakfast? Oh, wait. I did! This Baked PB&J Oatmeal is loosely based on a few of my other baked breakfast oatmeals but in PB&J form. Yep! There’s peanuts, peanut butter, and even jelly baked right into this oatmeal. Plus, I made it dairy-free, gluten-free, and vegetarian.

This Baked PB&J Oatmeal can be made in advance and reheats really well, meaning that it’s perfect for meal prepping and having on hand through the whole week. And, if you aren’t a fan or are allergic to nuts, you can always swap out the peanut butter for any nut free alternative. Since getting my knew kitchen appliances this past year, and with the weather being rather nice right now (as most winters are in Texas) I’ve spent my fair share of time recently with baking! Baking always used to intimidate me, but it’s become less and less of a fear as I’ve made my mistakes and learned from them as best I could.

As is with most New Years, I don’t tend to change my diet up a whole hell of a lot. Though one thing that I do try and do is eat less meat. Especially less red meat.
