Skinny Turkey Sriracha Meatballs (Crock Pot)

I had this amazing new Stubb's Texas Sriracha Anytime sauce sitting and staring at me for a few days before it finally hit me. As the heat of Texas summer starts to consider winding down, that always means that we're getting back into football season. And what does that mean? Tailgating and homegating foods will be back in action before you know it!

These partly Asian inspired and partly Thai inspired meatballs make for a great part of a meal, but would also be amazing for your next gamely spread as more of an appetizer. Toothpick or pretzel pick friendly grab-n-go snack!

As an added bonus, they can stay warming in a crock pot for several hours (if you can manage to keeping around for that long!)...

Peach Jalapeño Chicken Potstickers & Spicy Soy Dipping Sauce

I have this love-hate relationship with potstickers and wontons. I love to eat them and hate to make them. It kills me too! They are such an easy thing to make, but just as with any sort of individually wrapped food... it's time consuming! So I will start this off by saying, these are so easy-peasy - just be sure that you have some time on your hands to sit there and form each of them. It's not too bad, I think it took about an hour for me to prepare and cook these these, start to finish.

These potstickers are a million times tastier and better for you than the ones you'll get pre-made or at any restaurant. Why? Because you have complete control over what's going into them and how well they're cooked. Seriously, if I had the time I would make them everyday to eat.

Now, normally I would't step out of the box quite this far, but I had some leftover jalapeños and some lovely local peaches that needed to be used up, so I figured why not make some Asian fusion!...

Skinny Chicken Wonton Soup

It's time for another take-out fake-out!

I'm pretty obsessed with wonton soup. There's this place just a few blocks away from my house that has a killer one, and thankfully it's a chicken wonton soup. Oddly enough, I've found that it's sort of hard to find a chicken wonton soup as most wontons out there are stuffed with some sort of seafood or another, which just isn't my... cup of soup. Hah!

The thing is, over the past few years I've become increasingly skeptical of take-out and fast food. I tend to have a hard time eating things of which I'm not sure 100% what's it in or who's prepared it. This fear was ever more prevalent after our recent 6+ hour power outage which got me thinking... Do those places of through their refrigeration units like I do to toss out perishables in that situation? I sort of doubt it.

Either way, I wanted some chicken wonton soup this week and I'm not about to brave the take-out ventures for a good while yet. So what's a girl to do?...

Healthified Homemade Ramen

Okay, okay... so we all know what Ramen noodles are. Guilty as charged! I think that I almost survived in college off of Ramen, microwave burritos, pizza bites and hot pockets. And please... don't ask me about my colored ketchup phase.

Several months back now, my mom was going through (I mean... raiding) my pantry as she usually does when she comes over. She happened to stumble upon a single package of reduced sodium chicken flavored Ramen that I had in there. I was in the process of turning over the stuff in my emergency food preparation packs that I keep on hand just in case of power outage or... you know... Z-Day (haha.) Anyway, my mom immediately started to bust my chops. Hard.

Fall Harvest Turkey Thai Soup (Crock Pot)

This soup is perfectly amazing. It's the sort of soup that my dreams are made up of. Low calorie. Low carb. High protein and amazingly delicious. I somehow managed to catch an end-of-summer cold which I'm trying desperately to knock out as quickly as I can, and I always think the best way to do that is with some homemade soup!

Yes, I'm aware that it's still reaching the 90's occasionally here in Austin, but I need soup just like the rest of the country. Get yourself together Old Man Winter.

I had made some turkey breast tenderloins the other day and had some leftovers, so when I decided to jump on the soup band-wagon I knew exactly what I was going to do. Something fall inspired. Something 'harvest' oriented. Something... thai?

Avocado & Egg Spaghetti Squash Boats

I want to start off by saying, my grandmother was very upset at me for making a spaghetti squash dish just days after she left. I was hissed at more than once for it. Sorry Neenaw, but the show must go on! The good thing is, this dish is so super easy that she can make it at home for herself and her husband to enjoy.

It's not winter, I know... but it seems like I always have to make at least one spaghetti squash meal during the summer. Even though its a winter squash, it seems like I crave it a lot more on hot days rather than cold ones. Perhaps it has something to do with the cooler toppings and bright sauces that I use on it...
