I am already at the end of Week 3 - my, how time flies when you're eating well! What can I say - this weeks recipes were particularly de{light}ful.
I can't say enough about the Baked Egg & Avocado Bowl! I absolutely LOVE avocados so why not have them for breakfast? This may be my favorite breakfast so far though it would be equally amazing for lunch. I loved the Healthified Crock Pot French Dip and actually stretched it into two meals by serving the leftover meat as tacos on corn tortillas the next night. The Crock Pot Bang-Bang Chicken Lettuce Wraps were quick and easy to prepare and delicious. We had the Tortellini En Brodo on the most perfect of days for such a meal - it had been sleeting and snowing that day. The soup was absolutely amazing and I was sure that it was my new Skinny Fork favorite! That was, however, until I had the Verde Taco Chicken Bowl the next night. Leftovers from that meal were recycled a couple of days later, again as tacos made with corn tortillas, pico de gallo and avocado with a sprinkling of a Mexican cheese blend.
I have to say that I did not roll my eyes or turn up my nose at anything on the meal plan this week. The only glitch in my week was a family cook-out where we made Skinny Chipolte Cheddar Turkey Sliders (borrowed from Week 4's recipes.) That would have been fine and well except for the chips didn't plan on eating, along with having a few cocktails. After all, I have to be a little naughty every once in a while. Since this took place the night before I was to weigh in this week, my weight loss this week was not what I would have liked it to have been...
