These fun little pizzas are sure to fright and de{light} your family around Halloween. My daughter had so much fun helping me in the kitchen to make these perfectly spooky mini pizzas. Of course, as with most kids, she is a pizza aficionado... so the fact that she scarfed these pizzas down surely put a smile on my face!
But, I couldn't blame her. These little pizzas are... to die for. Muahaha!

About a week ago, Fleischmann’s sent a homemade pizza kit to me for free. I was super excited because, as I've said before, pizza is one of those things that we already eat about once a week in this house.
Now, I've made a lot of pizza crusts before, but I've never actually used 'pizza yeast'. I've always just used my standard active dry yeast that I use in my bread maker. Apparently the 'pizza yeast' is specially formulated for pizza crust. Go figure!
I was amazingly surprised with how well and how quickly the yeast worked. No proofing needed! My crusts came out beautifully. They were thick, fluffy, and perfectly crisp on the outside and soft on the inside. Great stuff, I tell you. I'll never go back to my old ways of regular active yeast for my pizza again.
In fact, I'm going to in-act (at least) one monthly pizza night with my family and Fleischmann’s Pizza Crust Yeast. But, like I said... it's really more of a weekly thing.
I definitely think that half of the fun of these was allowing my daughter to help with not only making the dough, but also with decorating them!
Though... I think she ate her weight in black olives. The little sneaker.
Spooktacular Whole Wheat Mini Pizzas

Ingredients:
Whole Wheat White Pizza Crust:
1 1/4 - 1 1/2 C. Whole Wheat White Flour, Divided
1 Envelope Fleischmann’s Pizza Yeast
1 Tsp. Sugar
1/2 Tsp. Sweetener (I used Stevia in the Raw.)
3/4 Tsp. Salt
1/8 Tsp. Dried Oregano
1/8 Tsp. Dried Basil
1/8 Tsp. Dried Parsley
2/3 C. Hot Water
3 Tbsp. Extra Virgin Olive Oil
Optional Topping Ideas:
Pesto Mummy & Monster - Skinny Spinach & Basil Pesto, Black Olives & Fresh Mozzarella.
Creepy Spiders - Thick & Hearty Pizza Sauce, Black Olives, Shredded Reduced Fat Pizza Cheese Blend.
Directions:
Preheat the oven to 425 degrees F. and lightly coat a pizza sheet with non-stick cooking spray. Set aside.
Whisk together 1 c. of the flour, the dry yeast, sugar, sweetener, salt and seasonings in a large bowl together until well combined.
Add in the water and oil and mix together until well blended; about a minute.

Add another 1/4-1/2 c. of flour gradually until the dough starts to come together and form into a ball.
I only was able to use 1/4 c. additional flour here.
I also used my stand mixer to do all the work for me, but you can do this by hand just as easily.
At this point you can either remove the dough and place it on a lightly floured surface to knead for about 4 minutes, or use the hook attachment on a stand mixer and allow it to do it for you.
Place the kneaded ball of dough out onto the lightly floured surface and folk it out to make about a 12" crust.
Use a cookie cutter or even a wide mason jar lid to cut out your mini pizza crusts.
I think my lid is about 3" across.
Carefully place the rounded crusts onto the prepared pizza pan.
I had enough dough for 8 pizzas but could only fit 7 on my pan!
Par-bake the crusts for about 6 minutes and remove from the oven.
Top each crust with desired toppings
Place the pizzas back into the oven to bake for another 6 minutes or until cheese has melted.
Remove from the oven and allow to cool slightly; just enough to handle.
Serve warm right away and enjoy.
I added some pizza sauce 'blood' drippings for a fun and frightful pre-halloween lunch!
They're so good... it's scary!
