I love Chicken Parmesan, and since I'm always trying to come up with new and innovative ways to put my spin on old classics, I decided to make a Skinny Chicken Parmesan Casserole! I wanted this dish to be light, easy (with only a handful of ingredients), and super delicious.
This is one of those great weeknight meals that you can pull together easily. Almost all of the ingredients are pantry staples in nearly every house. Such a simple and honest dish got rave reviews from the household. Full bellies and a clear conscience is what it's all about!
One of the biggest bonuses was that I was able to cook this one dish meal in just 30 minutes, with the oven being on only minimally in this warm Texas summer heat!
To make this dish lighter and better-for-you, I decided to go with Francesco Rinaldi Traditional No Salt Added Pasta Sauce. The sauce is low carb, under 100 calories per serving, gluten-free, and no preservatives (which is a big one for me!) This sauce was the perfect little short cut for my home cooking, still giving me the homemade taste that I absolutely love. It's a guilt-free indulgence and a great value for such high quality ingredients!
This dish was perfectly crispy-crunchy like any traditional chicken parmesan, without any of the hassle. One dish, 6 ingredients, and just 30 minutes to chicken parmesan heaven.
Seriously. Chicken... parmesan... heaven.
I cooked up a few chicken breasts that I had in the freezer, in the crock pot today with some reduced sodium chicken broth and then somewhat shred/cubed it to use in this chicken parmesan. Nothing too fancy. Just amazingly delicious and easy after a busy birthday weekend!

Ingredients:
2 Large (12 Oz. Total) Boneless Skinless Chicken Breasts, Cooked & Cubed or Shredded
1 (23.5 Oz.) Jar Francesco Rinaldi Traditional No Salt Added Pasta Sauce
1 1/2 C. Reduced Fat Shredded Italian Cheese
1/2 C. Whole Wheat Bread Crumbs
1/2 C. Panko
5 Fresh Basil Leaves, Minced
Salt & Pepper to Taste
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of an 8x8 casserole dish with non-stick cooking spray.
Layer the chicken in the bottom of the dish.
Top the chicken with the pasta sauce and mix with the chicken; sprinkle the cheese over the chicken and sauce mixture.

In a small bowl, combine the breadcrumbs, panko, fresh basil leaves, salt and pepper together.
Top the cheese with the seasoned breadcrumbs.
Place the dish into the oven and bake for 20-25 minutes or until the top is browning and the sides are bubbling up.
