The BIG football game is upon us THIS weekend, y’all! My family and I are already busy making gamely spread plans. I decided though, that I need to have a practice run this weekend though to test out this new recipe. And it worked out so well that I just HAD to share it right away. I mean… how can you go wrong with a 3 ingredient wonder?
How can you go wrong with stuffed Jalapeños? Or cheese? Or bacon? The simple answer is… you can’t! These Jalapeños aren’t stuffed with any cheese though. Nope! They’re stuffed with none other than pimento cheese. Don’t know what that is? Well, you should! Pimento cheese is a southern staple that’s made with shredded cheese, pimentos, and a few other things. It can be used as a spread on a sandwich or even a dip for crackers.
When I do anything with pimento cheese, I like to make the pimento cheese myself. I’ve made a couple of different kinds before, and you really can’t go wrong with either one since they’re all pretty damn good. If I do say so myself. And you’ll never guess that it’s lightened up either. Got a favorite pimento cheese? Feel free to use what you love. Any pimento cheese will work here.
I love that these poppers are easily made in double, triple, or even quadruple quantities. So if you’re having a big party on game day… never fear! These poppers can save the day. Of course I did sort of cheat on the ‘3 ingredient’ sentiment, since I’m basically counting the pimento cheese as one ingredient. But, the pimento cheese is easy to make or even use store bought in a pinch!
You’ll be amazed with how quickly these poppers are gobbled up from the game day spread. When making poppers in general, you’re basically using the same things needed to make pimento cheese. So… why not just use pimento cheese instead and make life just that more simple?

• 3 Large Jalapeños
• 4 Oz. Pimento Cheese
• 3 Cooked Low Sodium Center Cut Bacon Slices Directions:
Preheat the oven to 375 degree F. and lightly coat the inside of a baking dish with non-stick cooking spray; set aside.
Cut the jalapeños in half to remove the seeds and stems.
Divide the pimento cheese evenly among the jalapeño halves.
Top each with about half a slice of the cooked bacon.
Transfer the poppers to the prepared baking dish and place in the oven to bake for about 15 minutes or until the cheese is melted.
Once done, remove from the oven and serve right away to enjoy!
