I am completely under the weather today. I’m still not completely sure if it’s the weather, allergies, or if I just flat out have a cold. Nothing much is going to keep me from doing my thing though, so on with the show! Whilst my throat, face, and most of my body hurts… I’ve opted to keep the meals this week simple.
This Mediterranean Snack Box isn’t really a recipe, but more so a meal prep option for lunch! Plus, I have a few hummus recipes that would go perfectly in this box. The 5 Ingredient Roasted Red Pepper Hummus is one of my favorites. But that Roasted Beat Hummus has got to be the most pretty!
Once you pick your hummus, the rest of the box is well… even more easy! A few marinated greek olives, some nut and seed crackers, and a couple of dolmas will make you one happy little meal. …Or snack.
Dolmas can be a little tricky to find. There are some great local ones at some of my local grocery places, or if you’re lucky you can also find them in the International aisle. Don’t know what a dolma is? It’s a grape leaf that’s stuffed. Usually with rice and a mixture of spices. Nothing to be scared of, they’re delish!
This nifty little box makes a great one for weekly meal preps since nothing here can really got soggy or turn very easily. Just keep those crackers separate from the rest, and your golden!
Keep stored in an airtight container in the fridge as a grab-n-go light lunch.

• 2 Tbsp. Hummus
• 13 Nut & Seed Crackers
• 6 Mixed Marinated Greek Olives
• 2 Dolmas
Place each component into their own compartment (especially the crackers), cover, and store in the fridge until you’re ready to enjoy!
Stays good in the fridge for 3-5 days.
