It's been all too long since I posted much to pair with wine. One of my favorites from a while back was the Anatomy of a Cheese Plate, which gives a good break down of what all you could have available for a wine tasting or wine enthusiast sort of party. We live in an age of wine, people! My generation is said to drink nearly half of all the wine in the United States. That's a lot of wine for one generation. I guess we were all just raised right.
My inspiration for my antipasti tonight came from one of my dear grade-school friends over at Sweet Hersey Living. Her food and recipes always leave me drooling. She's truly one of the most creative people that I've ever known.
Of course, I needed to feel I had done my due diligence. So I loaded my antipasti plate up with plenty of vegetables, dips, and spreads to litter among the cheeses and meats. To lighten it all up further, I made this fabulous and super simple bruschetta!
I've said it before, and I'll say it again. Sometimes the most simple of ingredients can be the most amazing and flavorful when combined properly. And not much brings that statement more to life than bruschetta; which is merely made of tomatoes, garlic, vinegar, and seasoning. Yep! That's it.
So, I got myself a baguette of a wheat and multi-grain french bread to toast up; going along perfectly with this simple and delicious bruschetta, a perfect addition to any antipasti plate.

Ingredients:
1 Lb. Roma Tomatoes, Seeded & Chopped
1 Garlic Clove, Minced
2 Tsp. Basil Leaves, Chopped
1 Tsp. Balsamic Vinegar
Salt & Pepper to Taste
Directions:
Combine the chopped tomatoes, garlic, basil, vinegar, and salt and pepper to taste.
Serve right away or chill covered in the fridge until ready to eat.
