Ham & Cheese Omelette

I don’t know about you, but we had ham as part of our Christmas dinner and I managed to keep some on reserve for leftover breakfast this morning. This Ham & Cheese Omelette is one of my favorite ways to use up leftover ham. I based this omelette off of a few others that I’ve made in the past that packs an omelette up with as much protein as possible.

I like to sub in egg whites for part of the egg in any omelette. But, I try to keep at least one yolk in there for some color and flavor. Other than that, I love to put cottage cheese in my omelettes because it gives a bit of a boost to the protein and also bonus melty cheese goodness…

Jalapeno Popper Egg Bites (Instant Pot)

It’s been a while since I made some faux sous vide egg bites in the pressure cooker, so I thought this weekend would be the perfect time to make some! Being as I have made so many different kinds before, I thought I’d really step outside the box to make some spicy jalapeño popper egg bites this time instead. Instant Pot Poached Eggs

It’s been a good long while since I had some eggs for breakfast and if I’m being very honest? I’ve never had a poached egg before in my life. I’ve had them just about every other way there is other than poached. So, this morning I decided to try my hand at it. However it’s summer and I’m lazy. Instant Pot to the rescue!

Oh, how many times the Instant Pot has saved me.

These eggs are cooked up in no time and require NO technical or cooking skills what-so-ever. That’s right. these poached eggs are cooked right in the pressure cooker and you can play around with the timing to get them exactly where you want them as far as yolks go…

Spring Vegetable Crustless Quiche

I’ve made a lot of crustless quiches in the past, and with Spring in full swing, I decided to make one that used up the bounty of veggies that Spring offers up such as spinach, mushrooms, and asparagus. Unlike some of my other quiches, I wanted this one to be the absolute start of the plate. So, I stuffed it full of veggie goodness, used more eggs, less milk, and ended up with a low calorie, high flavor dish that was perfectly suited to Spring.

I think one of my favorite things about quiche has to be that it can literally be enjoyed as a meal at any time of day; breakfast, brunch, lunch, dinner… any and all! When enjoying with breakfast or as brunch, I serve it with fresh fruit. But if it’s al lunch or dinner option, I dress it up with a soup and/or salad!…

Baked Caprese Chicken

Cheers to easy dinners! This Baked Caprese Chicken is a real winner. With just a handful of ingredients and about 5 minutes of actual hands on time (maybe even less) this chicken is super easy, tasty, and quick to make! The recipe is easily doubled or tripled for a larger family, but I’ve left it scaled back for two servings.

So what’s caprese anyway? It’s generally a salad that includes tomatoes, cheese and either pesto or some sort of balsamic reduction. Since its Italian based, this chicken would be good paired with a simple side salad like I did, or with veggies and some pasta or zucchini noodles even.
