Whole Wheat Lasagna Roll-Ups

Yes, that's right... you can have your lasagna and eat it too!

What's better is now you don't have to feel guilty about indulging in it anymore. Most places I looked, a typical serving of one lasagna roll-up was anywhere between 350-550 calories. What?! That's madness!

If you're going to have pasta, you better at least do it right and make those carbs and calories well worth it. With this lightened up version of lasagna roll-ups, you won't feel like you're missing out on anything and that's because you're not!

Skinny Pesto & Mozzarella Stuffed Chicken

How could anyone resist a stuffed chicken breast? Well, certainly not me! Especially when it's stuffed with my favorite pesto and fresh melty mozzarella.

Yes. I'm allowed to say 'melty' here because it's oh-so-fitting.

A few weeks ago I had this amazingly delicious caprese style salad with smoked chicken breast and some sort of lemon pesto involved. I sort of based this stuffed chicken off that idea by adding some lemon zest into the breading mix.

The addition of the lemon definitely adds a new dimension of flavor to the chicken here, so you'll want to be sure not to leave that out!...

Spooktacular Whole Wheat Mini Pizzas

These fun little pizzas are sure to fright and de{light} your family around Halloween. My daughter had so much fun helping me in the kitchen to make these perfectly spooky mini pizzas. Of course, as with most kids, she is a pizza aficionado... so the fact that she scarfed these pizzas down surely put a smile on my face!

But, I couldn't blame her. These little pizzas are... to die for. Muahaha!

Skinny Pizza Potato Skins

I gotta admit, my lunch today was pretty amazing. As you can see.

I've said it before, and I'll say it again... potatoes always seem to get a bad reputation. Maybe it's because the vast majority of people that eat them always go for the greasy fried versions of potatoes. But, honestly there's a lot of good packed into these things!

Potatoes are a good source of B6, potassium, vitamin C, and fiber! Oh, and did you know that they are actually fairly low in calories? A whole spud is about 160 calorie on average, not too shabby.

Plus, they're filling enough to keep you satisfied and energized to get through your day, which is something that I desperately need today!...

Pesto Chickpea & Avocado Salad

I really cannot say enough about this salad. I would have never guessed that these 6-ish ingredients would have come together in such an awesome and delicious way. This mighty green salad was tossed together in less than 5 minutes and was unbelievably satisfying. Seriously. I've eaten it about four times already this week.

The lemon juice works to brighten up the pesto and together they actually end up as a rather substantial amount of flavorful 'dressing'. Yes, that's right - you don't need to add any dressing to this salad. The ingredients work together to make their own lemony pesto dressing that is de{light}ful and actually one of my newest favorite things...

Skinny Italian Stuffed Peppers (Crock Pot)

I've had a few stuffed peppers in the past. When I was younger, I remember my mom making some spanish style stuffed peppers that I thought were pretty good even though at the time I wasn't a huge pepper fan.

Oh, how times have changed.

These stuffed peppers are pretty amazing and ridiculously easy to do. With around 10-15 minutes of preparation, you can have these babies set to cook through the day in your crock pot with hardly any fuss at all!...
