Instant Pot Butter Chicken
If you’ve never had Butter Chicken before, you definitely need to try it. Butter chicken is a lot like tikka masala, but it more mild in the spice department. Tikka masala tends to have a bit more heat to it where as the butter chicken is the least spicy of these similar curry like dishes. Normally I go with tikka masala, but my kiddo wanted to try a non-spicy curry, so I decided to go with butter chicken instead. It’s great for a first timer.
This Butter Chicken is suuuuuper easy to make in the instant pot and is done in no time at all. Literally 15 minutes and you’ve got dinner ready to go. You get so much flavor packed into this dish that it’s hard to explain. It’s warm without being spicy at all and is amazing when served over jasmine rice…

I’ve made a handful of unique dishes over the years that make for a fun pumpkin/fall twist on classic recipes. This Chicken & Sweet Potato Curry is one of them! One of my favorite Fall inspired recipes is this Pumpkin Ramen from a few years back, which reminds me that I need to make it again this year since I haven’t yet. But this Chicken & Sweet Potato Curry is not only good, but it’s healthy AND perfectly festive as the weather starts to cool off.
Nothing will warm you up quicker than a warm meal that’s also full of warm flavors! I’ve always loved the mix of pumpkin and curry. Curry already tends to have warmth from curry powder and cayenne, which as it turns out, both pair super well with pumpkin…

Another good thing about it is that it reheats really well. So if you’re looking for a meal prep lunch idea, this would be a great choice!…

Let’s face it, we’re all suddenly a lot more influenced by a ‘beans and rice’ diet. Pantry cooking can be tricky, but it can also save time, money, and still be pretty damn healthy for you. This Chickpea Tikka Masala is a one pot dish that cooks up in just about 30 minutes. It’s gluten free, vegan, and vegetarian. Plus, like I said, one pan to cook it all means less mess to clean up in the end.
Chickpeas are a favorite among my family as it is. Seriously… there’s a few of us that would eat the things straight of the can if someone would let us. So, I try to use them as much as I can. And they work out really well in vegetarian dishes…
