Guinness Oat Bread

This Guinness Oat Bread is a favorite around here, with a full 12 ounces of beer baked right in, this bread is a real crowd pleaser. Even though St. Patricks day has passed, I’m still over here using up Guinness. One of my favorite things to do with beer (since I don’t drink it myself) is to use it in cooking, and more specifically, in baked goods.

I don’t think I’ve ever used a whole bottle of beer in bread before though. The stout gives this bread a beautiful golden hue and just enough beer taste to let you know it’s there without overwhelming you. The best part about this bread though, is that it’s sweet enough to be a part of breakfast, and savor enough to be a part of lunch or dinner!…

Carrot Cake Bread

I’m not going to lie, I’m excited and yet a little apprehensive about Spring this year. Last year about this time is when the whole world went to shit. Here’s to hoping that this year will be at least a bit better, even if it still is a little different from years past. Until we know for sure? I’m going to start filling my belly with all things Spring! And what goes better with Spring than carrot cake?

Irish Cream Chocolate Chip Cookies

As we get closer to March and to St. Patricks’s Day, I thought I would try my hand at making some chocolate chip cookies, but with a little bit of an Irish twist. These cookies here are made with some Irish Cream baked right in. And let me just tell you, they’re so sooo good!

The out edges are browned and have a little crisp to them while the insides are light, moist, and totally fluffy. And there’s just enough Irish Cream in there to get a hint of the flavor without it being over powering. Irish Braid Bread

With one of my favorite holidays coming up (St. Patrick’s Day) I thought it was about time to start rolling in a few fun takes on Irish dishes. One of our family favorite Irish bites has to be corned beef. It was actually one of the first meats that my picky-eater of a daughter would eat!

This Irish Braid Bread is sort of a take on an Irish infused Stromboli. It’s a croissant dough that’s wrapped (or braided) around corned beef, cooked spinach, red potatoes, and irish cheddar. Irish cheddar is another family favorite. It’s pretty freaking delicious and if you’ve never tried it, I highly recommend that you do so with this Irish Braid Bread…

Giant Chocolate Chip Unicorn Cookies

Immediately after I made my last batch of GIANT cookies, my kid was already asking me to make some more. Of course, I didn’t want to do them exactly the same, so today I decided to go with just colorful sprinkles and a variety of chocolate chips. That’s right, a variety. Big, regular, small. Some dark, some semi-sweet.

The end result was some more amazingly delicious GIANT cookies that had something different in every bite. Some bites were full of chocolate, others of sweet candy sprinkles, and then others were a delicious cookie.

Triple Chocolate Cheesecake (Instant Pot)

So, here’s the thing. Sometimes when you’re trying to eat better, feel better, and be better… you need to indulge a little bit. One of the many mantras that I try to keep in my own mind is that you can ‘eat whatever you want so long as you cook/make it yourself.’ I think the idea behind it is that you would burn off as many calories in making your food as you would eating it, or at least enough to counter balance it.

That means, today we’re having a Triple Chocolate Cheesecake and I’m not going to feel guilty about eating it. Why? Because I made it from scratch and I did my very best to make it better-for-you while still tickling that chocolate craving itch with all the richness and decadence that comes along with it….
